1 medium yellow onion (diced)
1 medium clove garlic (minced (about 1 teaspoon))
1 tablespoon minced fresh ginger (about half of a thumb-sized piece)
3 teaspoons curry powder
1/8 teaspoon crushed red pepper flakes
1/2 teaspoon cumin

DELIGHTFUL INDIAN COCONUT VEGETARIAN CURRY IN THE SLOW COOKER

Delightful Indian Coconut Vegetarian Curry in the Slow Cooker image

Here's a delightful dish I adapted from a non-vegetarian recipe. It's extremely easy to prepare in the crock pot. Deliciously creamy, it can be served by itself, with rice, or with steamed soft tortillas. Also makes a good samosa filling. It has a nice touch of hot pepper to it.

Tips:

  • Use a flavorful bean: Choose a bean with a bold flavor, such as a black bean, kidney bean, or pinto bean.
  • Rinse the beans thoroughly before cooking: This will help to remove any impurities and reduce the cooking time.
  • Soak the beans overnight: This will help to soften the beans and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of spices: Don't be afraid to experiment with different spices to create a unique flavor profile. Some good options include curry powder, cumin, chili powder, and smoked paprika.
  • Add some sweetness: A little bit of sweetness can help to balance out the spiciness of the curry. You can add sweetness with brown sugar, honey, or maple syrup.
  • Simmer the beans for at least 30 minutes: This will help to develop the flavors and tenderize the beans.
  • Serve the beans with rice or naan bread: This will help to soak up the delicious sauce.

Conclusion:

This recipe for Crock-Pot coconut curry baked beans is a delicious and easy way to enjoy a classic dish. The beans are simmered in a creamy and flavorful coconut curry sauce, and they are baked until they are tender and slightly caramelized. This dish is perfect for a weeknight meal or a potluck.
