CROCK POT SALSA STEAKS
This was a throw-together dish that resulted from defrosted meat, no fresh veggies, and a deep desire to break out my crock pot. The meat was falling apart tender (enough so that my 14 month old could eat it with no problems) and the juice was perfect over mashed potatoes. I'm sure you could use more steaks that what I did for the amount of juice, but this is typed out just as I made it.

SALSA BEEF CHILI (CROCK POT)
I believe this to be the tastiest, easiest, quickest-to-prepare chili there is!! For years I've played with chili recipies, trying to find or create the perfect one -- and now I've found it. I often do half ground pork and half ground venison instead of beef and I always use frozen corn -- either bought or home grown.

Steps:
- In crock pot combine the following.
- Chicken breast, can of black beans, jar of salsa, can of corn.
- Cook on high for approximately 4 to 4.5 hours or until chicken is almost cooked through. (if using thawed chicken cook time will drop significantly and will probably need to be checked around 2 hours).
- Once chicken is almost cooked through removed chicken pieces and shred.
- Put shredded chicken back into crock pot and mix well. After mixing if you notice excess liquid on top skim off excess with spoon. (you dont want it runny its better a bit firm).
- Add cream cheese - cut up bar as your put it in, It helps to melt it.
- Stir occasionally to help mix cream cheese evenly and cook for about 30-40 more minutes.
- Cook Rice while the Chicken is finishing.
- When chicken is finished spoon over rice and enjoy!
Tips:
- Choose the right salsa. Not all salsas are created equal. For this recipe, you'll want to use a salsa that is thick and flavorful. A good option is a medium or hot salsa. If you're using a mild salsa, you may want to add some additional spices, such as chili powder or cumin.
- Brown the meat. Browning the meat before adding it to the slow cooker will help to develop its flavor and prevent it from becoming dry. You can brown the meat in a skillet over medium-high heat, or you can use the browning function on your slow cooker.
- Add plenty of vegetables. Vegetables add flavor, texture, and nutrients to this dish. Some good options include onions, peppers, corn, and black beans. You can also use frozen vegetables in this recipe.
- Use a good quality broth. The broth you use will make a big difference in the flavor of this dish. Use a broth that is flavorful and has a low sodium content. You can use chicken broth, beef broth, or vegetable broth.
- Season to taste. Once the dish is cooked, taste it and adjust the seasoning as needed. You may want to add additional salt, pepper, or chili powder.
Conclusion:
This crock pot salsa chicken is an easy and delicious weeknight meal. It's perfect for busy families or anyone who loves Mexican food. The chicken is cooked in a flavorful salsa, vegetables, and broth, and it's served with rice, beans, and tortillas. This dish is sure to be a hit with everyone at the table.
