32 ounces salsa (I use 2- 16 oz. jars)
1 (14 1/2 ounce) can corn, drained
1 (14 1/2 ounce) can black beans, drained
flour tortilla
sour cream
guacamole
lettuce
tomatoes
cheese
salsa

Steps:

  • Place first four ingredients in crock pot.
  • Cook on low 6-8 hours.
  • 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
  • To serve, use chicken mixture as filling inside tortillas.
  • Add desired condiments.

12 -16 ounces salsa
1 (1 ounce) packet taco seasoning
1 cup sour cream
1 (12 ounce) can sweet corn (optional)

Steps:

  • season chicken on both sides with taco seasoning and put it in the crock pot.
  • pour salsa over it.

3 sirloin tip steaks (large thin cuts)
4 cups water
8 ounces salsa (about half an average jar)
1 (6 ounce) can tomato paste
2 garlic cloves
2 tablespoons vinegar
salt and pepper (to taste)

Steps:

  • Press garlic cloves into the crock pot using garlic press, or finely mince using another method, adding juice and pulp to the crock. For the beginner cook, 1 Tbs of dry minced garlic can be substituted.
  • Add all other ingredients to the crock except steaks.
  • Whisk together until well blended and tomato paste is no longer clumpy.
  • Submerge steaks in sauce.
  • Cover and simmer 4-5 hours on HIGH.

5 -6 pieces frozen boneless skinless chicken breasts (vary amount depending on crock pot size)
1 (8 ounce) bar cream cheese
1 (15 ounce) can black beans, drained
1 (8 ounce) can corn, drained
1 (15 ounce) jar salsa, If you want spicy make sure to get a hot salsa as the cream cheese mellows out the flavor quite a bi

  • In crock pot combine the following.
  • Chicken breast, can of black beans, jar of salsa, can of corn.
  • Cook on high for approximately 4 to 4.5 hours or until chicken is almost cooked through. (if using thawed chicken cook time will drop significantly and will probably need to be checked around 2 hours).
  • Once chicken is almost cooked through removed chicken pieces and shred.
  • Put shredded chicken back into crock pot and mix well. After mixing if you notice excess liquid on top skim off excess with spoon. (you dont want it runny its better a bit firm).
  • Add cream cheese - cut up bar as your put it in, It helps to melt it.
  • Stir occasionally to help mix cream cheese evenly and cook for about 30-40 more minutes.
  • Cook Rice while the Chicken is finishing.
  • When chicken is finished spoon over rice and enjoy!
