2 lbs chicken breast (boneless, skinless)
1 cup black beans (drained and rinsed)
1 cup black eyed peas (drained and rinsed)
1 cup canned fire roasted tomatoes (drained)
1/2 cup corn kernals (canned or frozen)
1/2 cup bell pepper (diced)
1/4 cup sweet onion (diced)
1/4 cup diced jarred jalapeños (optional)
3 cloves fresh garlic (pressed)
2 tbsp italian dressing mix (divided)
1 tbsp extra virgin olive oil
1 cup colby jack cheese (shredded)
2 tbsp fresh lime juice (about 1 lime)
1 tbsp cilantro (optional)

Steps:

  • Lay the chicken breast flat in a casserole dish, then sprinkle 1 tbsp of the italian dressing seasoning over the top.
  • In a bowl, mix the black beans, black eyed peas, fire roasted tomatoes, corn, onion, bell pepper, garlic, oil, lime juice, and the remaining 1 tbsp dressing mix until combined.
  • Spread the bean mixture over the seasoned chicken. Bake uncovered on the middle rack at 375˚F for 45-55 minutes or until the chicken is cooked through (internal temp 165˚F)
  • 5 minutes before the baking is finished, remove the dish and cover the top evenly with cheese and return to the oven to cook until done.
  • Garnish with cilantro and serve over rice or with your favorite side dishes. Enjoy!

4-6 chicken breasts
2 tablespoons brown sugar
1 tablespoons Dijon Mustard
2 cups salsa (any type)
1 (15 ounce) can corn, drained
1 (15 ounce) can black beans, drained and rinsed
1/2 cup sour cream (plus extra for serving)
Brown rice (for serving)

Steps:

  • 1. Place chicken in a 5-6 quart greased slow cooker. 2. In medium bowl mix brown sugar, mustard, and salsa. 3. Pour mixture over chicken. Add water to cover chicken, if needed. Cook on low for 6-8 hours or high for 4 hours. 4. With 30 minutes of cook time remaining remove the lid and shred the chicken using two forks. 5. Add the beans, corn, and sour cream to the slow cooker and mix together with the chicken. Replace lid and cook for remaining 30 minutes. 6. Serve over rice with sour cream.

Crockpot Cowboy Chicken is an easy chicken recipe your whole family will love packed with corn, salsa, and black beans.

2 lbs Boneless Chicken (I prefer Chicken Breast, but Thighs are good too)
1 jar Salsa (Whatever your favorite is! (small jar is best))
1 can Corn (Fire roasted is great. You can also do a small bag of frozen corn.)
1 can Black Beans
1/2 - 1 tsp Chili Powder (Depends on your heat preference)
1 tsp Cumin
1 tsp Cilantro
1 tsp Garlic Powder

Steps:

  • Put all seasoning ingredients in a small bowl and mix well.
  • Cut the fat off the chicken and then put in the crockpot.
  • Top the chicken with the seasoning.
  • Empty the jar of salsa in the crockpot.
  • Drain corn and dump over chicken.
  • Cover and cook on low for 4 hours.
  • Drain and rinse black beans thoroughly. Then dump into crockpot.
  • Cover and cook for an additional 1-2 hours.
  • Serve over rice and top with your favorite toppings; sour cream, greek yogurt, cheese, guacamole, etc.

3 pounds of chicken - chicken thighs work perfectly, or use breasts or both.
1 1/2 cups fresh salsa (see Note)
1/2 cup Worcestershire sauce
3 teaspoons honey
3 teaspoons Dijon-style mustard
1 (14-ounce) can black beans, drained and rinsed

Steps:

  • Arrange chicken pieces in the bottom of a lightly sprayed slow cooker. Spoon the salsa over the chicken. Mix the Worcestershire sauce, honey and mustard and pour over the ingredients in the cooker. Add the beans and cook on low for 6- 8 hours. To serve: As a dinner entre, serve each guest one piece of chicken on a plate with a whole grain side (such as the rice* below) and spoon sauce over all. Or serve as tacos: Remove bones and skin from the chicken and shred the meat. Return the meat to the sauce in the cooker and serve spooned into warm tortillas, topped with sliced avocados and sour cream if desired.
