6 half-inch thick slices from a baguette
4 medium dried shiitake mushrooms, rehydrated and sliced thinly (or 4 fresh shiitake mushrooms)
1 clove garlic
olive oil
basil leaves for garnishing
1 small wedge brie (you won't need the whole wedge for this app. of course, but extra brie is never a bad thing)

Steps:

  • 1 Preheat the oven to 350F. 2 Mince the garlic. Slice the mushrooms as thinly as possible. 3 Heat a tablespoon or so of olive oil in a skillet, then sauté the garlic it begins to soften. Add the mushrooms and cook for three to four minutes, until the mushrooms are nice and tender. Season to taste with salt and pepper. 4 While the mushrooms are cooking, arrange the baguette slices on a baking sheet. Brush both sides of each slice with a little bit of olive oil, and pop the baking sheet into the oven. Toast the bread for about 8-10 minutes at 350F, flipping the slices halfway through to get both sides brown. 5 When the mushrooms are cooked and the bread toasted, assemble the crostini by topping each with a slice of brie and a dollop of mushroom mixture. Bake for a couple of minutes, until the cheese is melted. Sprinkle with chopped parsley, or garnish with a basil leaf.

3 tablespoons butter
1/2 lb fresh shiitake mushroom, stemmed, caps chopped
4 ounces cremini mushrooms, chopped
2 garlic cloves, minced
1/2 cup whipping cream
1/2 cup crumbled blue cheese (about 2 ounces)
1/2 cup chopped thinly sliced prosciutto (about 2 1/2 ounces)
18 slices sourdough bread (1/2 inches thick, diagonally sliced)
chopped parsley

Steps:

  • Melt butter in a heavy large skillet over medium high hear. Add all mushrooms and garlic and sauteed until mushrooms are cooked through and brown, about 10 minutes.
  • Add cream and boil until liquid is completely absorbed, about 2 minutes.
  • Remove from heat. Add bleu cheese and stir until cheese melts.
  • Mix in proscuitto. Season with salt and pepper. Transfer to a bowl. (Mushroom topping can be made 1 day ahead. Cover and refrigerate. If you make this the day before make sure to bring the topping mixture to room temperature so it is easy to work with.).
  • Preheat oven to 375 degrees. Arrange bread slices on baking sheet. Bake until just golden, about 5 minutes.
  • Mound 1 generous tablespoon mushroom topping on each slice of bread. Return to oven and bake until heated through, about 6 minutes.
  • Sprinkle with chopped parsley.

4 egg roll wrappers
1/4 cup purchased fat-free Caesar salad dressing
2 tablespoons minced shallots
4 teaspoons Dijon mustard
2 teaspoons water
1/8 teaspoon dried crushed red pepper
14 ounces assorted fresh wild mushrooms (such as oyster, crimini and stemmed shiitake), cut in half
1 1/2 3 1/2-ounce packages mushrooms, trimmed to 1 1/2-inch lengths
1/3 cup (packed) thinly sliced arugula
4 sun-dried tomato halves (not packed in oil), soaked in hot water until tender, then drained and chopped

Steps:

  • Preheat oven to 350°F. Generously spray large baking sheet with nonstick spray. Place 1 egg roll wrapper on work surface. Using 2- to 2 1/4-inch-diameter cookie cutter, cut out 6 rounds from wrapper. Transfer rounds to prepared baking sheet. Repeat with remaining 3 egg roll wrappers, making 24 rounds total. Spray rounds with nonstick spray. Bake rounds until golden brown, turning once, about 3 minutes per side. Cool.
  • Increase oven temperature to 400°F. Generously spray 2 more baking sheets with nonstick spray. Combine purchased dressing, shallots, mustard, 2 teaspoons water and crushed red pepper in large bowl; stir to blend. Transfer 1 1/2 tablespoons dressing to small bowl and reserve. Place 14 ounces fresh wild mushrooms in large bowl with remaining dressing; toss to coat. Let stand 25 minutes.
  • Arrange half of mushroom mixture in single layer on each prepared baking sheet. Season with salt and pepper. Bake until mushrooms are golden brown, turning mushrooms over halfway through baking, about 12 minutes. Cool slightly. Coarsely chop cooked mushrooms. Return cooked mushrooms to large bowl. Add enoki mushrooms, arugula, sun-dried tomatoes and reserved 1 1/2 tablespoons dressing. Toss to coat. Season to taste with salt and pepper. (Can be prepared 8 hours ahead. Store egg roll rounds airtight at room temperature. Cover and refrigerate mushroom mixture. Bring to room temperature before serving.)
  • Arrange egg roll rounds on platter. Spoon mushroom mixture onto egg roll rounds and serve.

8 slices country bread, 1/2 inch thick

3 tablespoons brandy or 3 tablespoons cognac
3/4 cup heavy cream
1/2 cup mascarpone

Steps:

  • Melt 6 tablespoons butter with 1 teaspoon garlic in a big skillet.
