Steps:
- Make the crust: Preheat oven to 375 degrees. Butter a 9-by-9-inch baking pan. Line with parchment paper, leaving a 2-inch overhang. Butter parchment; set aside.
- In the bowl of a food processor, combine flour, sugar, salt, and butter. Pulse to combine. Add egg and pulse until evenly moistened. Transfer mixture to prepared pan; press into bottom (use the base of a dry measuring cup or a small offset spatula to help). Freeze for 10 minutes. Bake until lightly golden, 20 to 25 minutes.
- Make the filling: In a saucepan, combine dates, sugar, and cider. Cook over medium heat until soft and the consistency of jam. Using a hand blender, puree mixture until smooth. Stir in lemon zest. Spread mixture evenly over baked crust.
- Make the topping: In a medium bowl, whisk together oats, flour, brown sugar, salt, and cinnamon. Using your hands, work in butter to form crumbs. Evenly distribute crumbs over filling to cover. Bake until topping is golden brown and filling is set, 20 to 25 minutes. Run a paring knife around edges of pan to loosen; let cool completely in pan on wire rack. Using parchment overhang, remove from pan; cut into squares using a serrated knife.

Steps:
- Preheat oven to 350°F. Butter 8x8-inch metal baking pan. Bring 1 1/2 cups water to simmer in medium saucepan. Add dates; simmer until very soft and thick, stirring occasionally, about 10 minutes. Cool to room temperature. Stir in vanilla.
- Combine flour, sugar, oats, cinnamon, baking soda, and salt in large bowl; stir to blend. Add butter. Using fingertips, rub in until moist clumps form. Press half of oat mixture evenly over bottom of prepared pan. Spread date mixture over. Sprinkle with remaining oat mixture; press gently to adhere. Bake until brown at edges and golden brown and set in center, about 40 minutes. Cool completely in pan on rack. Cut into bars and serve.
Tips:
- Use a food processor to quickly and easily chop the dates and nuts. This will save you time and effort, and it will also ensure that the ingredients are evenly chopped.
- If you don't have a food processor, you can chop the dates and nuts by hand. Just be sure to chop them finely so that they blend well with the other ingredients.
- Be sure to use pitted dates. If you're using pitted dates, you can skip the step of removing the pits.
- If you don't have any vanilla extract, you can use almond extract or rum extract instead.
- You can add other spices to the crumb topping, such as cinnamon, nutmeg, or ginger. Just be sure to use a light hand so that the spices don't overpower the other flavors.
- The bars can be stored in an airtight container at room temperature for up to 3 days. They can also be frozen for up to 2 months.
Conclusion:
Crumb-topped date bars are a delicious and easy-to-make treat that are perfect for any occasion. They're made with a simple combination of oats, flour, sugar, butter, and dates, and they're topped with a sweet and crunchy crumb topping.
