1/4 cup melted butter
1/4 cup chopped fresh parsley (or use 1 teaspoon dried parsley flakes)
1/2 teaspoon garlic powder or 1 tablespoon finely minced fresh garlic
6 tablespoons favorite prepared mustard (I use honey mustard for this)
4 cups fresh breadcrumbs
7 -8 center-cut pork chops (about 3/4-inch thick)
seasoning salt
pepper (can use regular table salt in place of seasoning salt)

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a medium bowl mix together melted butter, chopped parsley, garlic powder or fresh minced garlic and 4 tablespoons (1/4 cup) prepared mustard; mix in fresh breadcrumbs.
  • Spread the remaining 2 tablespoons mustard on both sides of pork chops (if desired you can slightly more than 2 tablespoons to spread on the chops) then season with salt and pepper.

Four 5- to 6-ounce bone-in pork chops, preferably center cut
Kosher salt and freshly ground black pepper
3 cups buttermilk
2 tablespoons hot sauce
3 cups finely crumbled cornbread
1 quart vegetable oil
2 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1 teaspoon hot sauce
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper and top with a cooling rack.
  • Sprinkle both sides of the pork chops liberally with salt and pepper. Combine the buttermilk and hot sauce in a large mixing bowl. Put the pork chops in the buttermilk mixture, being sure that all 4 are submerged. Set aside to rest for 30 minutes. Meanwhile, put the cornbread crumbs into a shallow dish.
  • Pour the vegetable oil into a large (10-inch) cast-iron skillet or heavy-bottomed pan. Clip a deep-frying thermometer to its side and heat the oil to 350 degrees F.
  • Lift a pork chop out of the buttermilk by its top bone using tongs, and allow any excess to drip off. Lightly dredge both sides of the pork chop in the cornbread crumbs. Carefully lower the coated chop into the hot oil. Repeat this process with a second chop. Cook the chops until crispy on one side, 3 to 4 minutes. Gently turn the pork chops and fry until golden brown, an additional 3 to 4 minutes. Transfer the crispy chops to the prepared cooling rack. Sprinkle the chops with additional salt and transfer to the oven to stay warm while the remaining chops are fried. Repeat this process with the remaining pork chops.
  • For the white gravy: Reserve 2 tablespoons of skillet oil for the gravy, then drain the remaining oil from the skillet, being sure to remove any bits of fried cornbread left behind. Add the butter to the skillet, pour in the reserved oil and heat over medium heat until the butter melts. Sprinkle in the flour, whisking, and cook until a smooth paste is formed, about 1 minute. Pour in the milk, whisking continuously. Cook, whisking occasionally, until a thick sauce is formed and the gravy coats the back of a spoon, 3 to 5 minutes. 1 medium red onion, cut into 1/2-inch-thick wedges
5 tablespoons olive oil
Kosher salt and freshly ground black pepper
3/4 cup panko breadcrumbs
4 tablespoon unsalted butter, melted
2 tablespoons whole-grain mustard
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves
Four 1- to 1 1/4-inch-thick bone-in pork rib chops (about 12 ounces each)
1 bunch rainbow Swiss chard, stems cut into 1/2-inch pieces, leaves cut into 2-inch pieces
1/4 cup low-sodium chicken broth
1 tablespoon apple cider vinegar

  • Position oven racks in the upper and lower third of the oven and preheat to 450 degrees F.

Cook, stirring, until crisp-tender, about 2 minutes. Add the chard leaves and chicken broth and continue to cook, stirring, until the chard is wilted and the broth has almost completely evaporated, 2 to 3 minutes more. Stir in the vinegar, then season with salt and pepper.

1 pound small Yukon Gold potatoes, quartered
2 large shallots, cut into quarters with some root attached

Steps:

  • Preheat oven to 450°F. Toast fennel seeds in a small dry skillet over medium heat, tossing often, until fragrant, about 4 minutes. Let cool.

1 tablespoon olive oil
1 cup seasoned dry bread crumb (we use italian style)
4 garlic cloves (chopped)
additional oil (for frying)

Steps:

  • Spread parmesan cheese in a shallow dish.
  • Beat eggs with the 1 tbls of olive oil in a separate shallow dish.
  • Spread bread crumbs in third shallow dish, pat pork chops dry with paper towel and set aside.
  • Combine salt, pepper, sage, thyme, and sprinkle generously over both sides of the chops. Press seasoning into meat with your fingers.
  • Dredge seasoned chops in parmesan cheese, coating both sides. Then using tongs dip chops in egg mixture and let excess drip off. Finally dip coated chops in bread crumbs. Press with fingers to ensure even coating.
  • Place breaded chops on wire rack set over a baking sheet to allow coating to dry for about 5 minutes.
  • Heat large skillet over medium-low heat with enough oil to come halfway up sides of chops. Stir in garlic and cook until lightly browned to season oil. Remove garlic and discard.
  • Increase heat to medium. Once oil is hot add chops and fry about 4-6 minutes on each side or until golden brown and crispy.
  • To keep crust in tact, drain any excess oil by placing chops on wire rack again.

1 lb pork chop
1 cup ground almonds
1 teaspoon salt
1/2 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 egg (beaten)
1 -3 tablespoon water
1/4 cup finely diced onion
2 -3 garlic cloves
1 (11 ounce) can mandarin oranges (drained and liquid reserved)
4 tablespoons Dijon mustard
2 tablespoons soy sauce
fresh parsley (optional)
olive oil

Steps:

  • Mix ground almonds, salt, and peppers.
  • In a small bowl mix egg and water.
  • Spread almond coating in a shallow dish or plate.
  • Dip chops in egg wash and then dredge in almond mixture. Set aside.
  • Heat oil in a pan and sauté onions and garlic until lightly browned. Remove from pan and set aside.
  • Brown chops in oil over medium heat. 2-3 minutes on a side or until golden brown.

2 cups crushed pretzel sticks (about 5 ounces)
8 1-inch-thick center-cut pork rib chops
6 tablespoons (3/4 stick) butter, divided

Steps:

  • Simmer balsamic vinegar in small saucepan over medium heat until reduced to 2/3 cup, about 10 minutes. Transfer to small pitcher. DO AHEAD: Balsamic reduction can be made 3 days ahead. Cover and let stand at room temperature.
  • Using vegetable peeler, remove peel from oranges (orange part only) in long strips. Slice peel lengthwise into very thin strips. Place peel in heavy small saucepan and add enough cold water to cover peel by 1 inch. Bring to boil; strain. Repeat 2 more times. Return peel to same saucepan. Add 3/4 cup water and sugar.   • Mix cream, mustard, and 2 tablespoons candied orange peel in heavy small saucepan. Bring to boil; reduce heat to medium and cook until sauce is reduced to 1 cups, about 12 minutes. Season to taste with salt and pepper. DO AHEAD: Can be made 8 hours ahead. Cover and chill.
  • Place flour in shallow bowl. Whisk eggs to blend in another shallow bowl. Spread crushed pretzels on rimmed baking sheet. Sprinkle pork chops on both sides with salt and pepper. Working with 1 pork chop at a time, press 1 side of chop into flour, dip floured side only into eggs, then press into pretzels, coating 1 side only. Transfer to baking sheet, coated side up. Repeat with remaining pork chops, flour, eggs, and pretzels. DO AHEAD: Can be made 2 hours ahead. Cover and refrigerate.
  • Preheat oven to 450°F. Melt 3 tablespoons butter in each of 2 large ovenproof skillets over medium-high heat. Add 4 pork chops to each skillet, coated side down, and cook until brown, about 2 minutes. Turn chops over and transfer both skillets to oven. Roast until pork is cooked through and thermometer inserted horizontally into chop registers 140°F, about 10 minutes. Let chops stand 5 minutes.
  • Rewarm sauce. Spoon 2 tablespoons sauce onto each plate and place chop atop sauce. Drizzle with balsamic reduction and garnish with remaining candied orange peel.

1/4 cup Bourbon
1 cup low sodium beef broth

1 teaspoon finely ground dark-roasted ground coffee

extra virgin olive oil

Steps:

  • Make the sauce: in a saucepan over med-high heat, melt the butter.
  • Add in the onion; cook 3 minutes, until tender, stirring occasionally to prevent browning.
  • Add in the garlic; cook for 1 minute, stirring occasionally.
  • Remove pan from heat, carefully add in bourbon; then return pan to the heat (watch out-it might flame).

  • Add in the thyme; season with salt and pepper to taste.

  • Grill over Direct Medium heat until barely pink in the center of the meat, 8-10 minutes, turning once.
