1 Tablespoon olive oil
20 oz cube steak ((4 steaks about 5 oz each))
Kosher salt and freshly ground black pepper
1/4 cup Worcestershire sauce

Steps:

  • Heat olive oil in a cast iron skillet over high heat.
  • While it is heating, season both sides of the steaks with salt and pepper.
  • Carefully place steaks in the pan. Depending on the size of your pan and steak, you may need to do this in two batches. Sear for about 3-4 minutes, or until browned, then flip over and sear the other side for another 3-4 minutes.
  • If you seared the steaks in batches, return all steaks to the pan and pour the Worcestershire sauce over the steaks. Reduce for a minute or two, turning the steaks to coat them completely in the sauce.
  • Remove from the pan and serve immediately.

This steak chili is the best beef chili recipe ever. That's a big statement, but it's true. It has a rich flavor and the tender chunks of slow-cooked chuck steak are dreamy. We go easy on the beans, but you can either omit them or add extra as you like. You'll want to keep this steak chili recipe in your back pocket so you can pull it out every weekend.

2 lb stewing beef (cut into bite-sized pieces)
1 teaspoon EACH: salt and pepper
2 tablespoons oil (divided)
1 large onion (minced)
4 cloves garlic (minced)
2 stalks celery (minced)
5.5 ounce can tomato paste
3 tablespoons chili powder (see notes)
1 teaspoon EACH: oregano and cumin
3 cups beef bone broth (see notes)
28 ounce can crushed tomatoes
2 tablespoons honey
14 ounce can kidney beans (drained and rinsed (omit for paleo chili))

Steps:

  • Dry the beef well with paper towels then sprinkle the salt and pepper over the top.
  • Heat 1 tablespoon of the oil in a large pot over medium-high heat. Add half of the beef and brown well on 2 sides. Remove it from the pan and repeat with the remaining beef, adding more oil as needed. Remove the second batch of browned beef from the pot.
  • Add the remaining tablespoon of oil to the pan. Add the onion and cook until it is soft and starts to brown, about 5 minutes. Add the garlic and celery and cook for 2 minutes.
  • Push the veggies to the side of the pan and add the tomato paste. Let it cook for 2-3 minutes, or until it becomes sweet smelling. Add the chili powder, oregano, and cumin to the pot and mix.
  • Pour the beef broth into the pot and scrape the bottom of the pot with your mixing spoon to remove any of the dark stuck on bits. Add the crushed tomatoes, honey, and browned beef and bring the pot to a boil. Reduce the heat to low and cover the pot. Very gently simmer the steak chili for 2 hours. (See notes)
  • Just before serving, add the beans and let them warm. Season to taste with salt.

3 tablespoons packed light brown sugar
2 shallots, minced
1 tablespoon thai red chili paste
1 garlic clove, minced
1 1/2 teaspoons vegetable oil
3/4 teaspoon salt
4 (4 ounce) beef tenderloin steaks (1-inch thick)

Steps:

  • In a bowl, combine the vinegar, brown sugar, shallots, chili paste, garlic, 1 teaspoon oil, and ¼ teaspoon salt in a bowl.
  • Add the steaks, turning to coat evenly.
  • Remove the steaks, reserving the sauce; pat the steaks lightly with paper towels and sprinkle with remaining ½ teaspoon salt.
  • Heat the remaining ½ teaspoon oil in a large nonstick skillet over high heat until almost smoking.
  • Arrange steaks in a single layer so that they don't touch.

4 -5 cube steaks
1 (2 1/2 ounce) package onion soup mix (dry)
1 cup water
1 teaspoon minced dried onion
1/2 teaspoon penzy's beef roast seasoning
1 (8 ounce) can tomato sauce
salt and pepper, to taste
2 tablespoons bottled. chili sauce
2 -3 tablespoons oil
1 (8 ounce) can sliced mushrooms

Steps:

  • Put the oil in a dutch oven, and fry steaks over high-medium heat til browned.

1 large plum tomato
1 cup water
4 tablespoons olive oil
6 garlic cloves, chopped
1 cup (or more) chicken stock or canned low-salt chicken broth
1 cup beef stock or canned beef broth
2 cups dry red wine
2 tablespoons (1/4 stick) butter
1/2 teaspoon minced fresh rosemary
4 6- to 7-ounce beef tenderloin steaks (about 1 inch thick)

Steps:

  • Place both chilies and plum tomato in heavy medium skillet. Toast over medium-high heat until chilies are fragrant and deepen in color and tomato turns black in spots, turning occasionally, about 5 minutes. Remove from heat. Cool. Stem, seed and tear chilies into small pieces. Chop tomato. Place chilies, tomato and 1 cup water in small saucepan. Bring to boil. Reduce heat and simmer until chilies are tender, about 10 minutes. Puree chili mixture in blender until smooth.
  • Heat 3 tablespoons oil in heavy large skillet over medium-high heat. Add garlic and sauté 1 minute. Add 1 cup chicken stock and beef stock, then wine; boil until reduced to 1 cup, about 15 minutes. Stir in chili puree, butter and rosemary; simmer 1 minute. Season sauce to taste with salt and pepper. (Sauce can be prepared 1 day ahead. Cover and refrigerate.)
  • Heat remaining 1 tablespoon oil in large nonstick skillet over medium-high heat. Sprinkle steaks with salt and pepper. Add steaks to skillet and cook to desired doneness, about 4 minutes per side for medium-rare.
  • Bring sauce to simmer, thinning with more chicken stock if necessary. Place 1 steak on each of 4 plates. Top each with 1/4 cup sauce. Serve, passing remaining sauce separately.
