Steps:
- Preheat the oven to 350 degrees F.
- For the cilantro pesto: Add the cilantro, pine nuts, Parmesan, lemon juice and garlic to a food processor and pulse until the ingredients are roughly chopped, 4 to 5 times. With the processor running, slowly drizzle in the oil through the lid opening. Process to desired consistency; you can make the sauce completely smooth or leave it fairly chunky.
- For the roasted tomatoes: Line a baking sheet with parchment paper and add the tomatoes and shallot. Drizzle with olive oil and season with salt and pepper. Cook until the tomatoes start to break down and brown slightly, about 15 minutes. Let cool.
- For the salad: In a large bowl, combine the pasta, chicken, tomatoes and pesto and toss. Garnish with shaved Parmesan and a few cilantro leaves and serve.
CUCUMBER AND TOMATO SALAD WITH CILANTRO AND MINT
Greater Los Angeles is a collection of not just smaller cities but also exotic populations. Among those cities is Glendale (not so small: it would be the second-most-populous city in New England), a center of the Armenian diaspora and home to one of the world's largest Armenian populations outside Armenia. Fleeing religious violence in the late 19th century, genocide in the early 20th or the Soviet Union after that, Armenian Californians became integral in the development of the fig, raisin and bulgur businesses. They also opened restaurants. This salad comes from one of them, Adana. The chef and owner, Edward Khechemyan, gave me the recipe in 2013.

Tips:
- Choose the Right Cucumber: For the best flavor and texture, use fresh, firm cucumbers. English or Persian cucumbers are ideal, as they have fewer seeds and a milder flavor.
- Prepare the Cucumbers Properly: To prevent the cucumber from becoming watery, slice it thinly and toss it with salt. Let it sit for 10 minutes, then drain off the excess liquid.
- Use Fresh Herbs: Fresh cilantro adds a burst of flavor to this salad. If you don't have cilantro on hand, you can substitute parsley or basil.
- Don't Overcook the Pasta: Cook the pasta according to the package directions, but be careful not to overcook it. Al dente pasta is best for this salad.
- Use a Good Quality Olive Oil: Extra virgin olive oil is the best choice for this salad, as it has a rich flavor and aroma.
- Chill the Salad Before Serving: This salad is best served chilled. After assembling the salad, cover it and refrigerate it for at least 30 minutes before serving.
Conclusion:
Cucumber cilantro pasta salad is a refreshing and flavorful summer dish that is perfect for picnics, potlucks, or a light lunch or dinner. It is easy to make and can be tailored to your own taste preferences. With its combination of fresh vegetables, herbs, and a tangy dressing, this salad is sure to be a hit with everyone who tries it.
