CREAMY GOAT CHEESE CHIVES DIP
This is a fresh summer dip that my sis and me came up with when needing to use up some things that were left in the fridge. It is tangy from the goats cheese with a nice freshness added by cucumber and tomatoes. Goes great with crudites and crackers. I hope youll enjoy this as much as we do!

CREAMY GOAT CHEESE AND CUCUMBER SANDWICH
A creamy goat cheese and cottage cheese blend provides satisfying and comforting flavor. I use sumac to bump up the already satisfying and comforting flavor of the creamy goat cheese and cottage cheese blend that blankets cucumbers, celery and dill. My first choice for bread is pumpernickel, but black bread or whole wheat country bread are also good.

Steps:
- In a mini-processor (or if multiplying the recipe, in a food processor fitted with the steel blade), blend together the goat cheese, cottage cheese and yogurt until smooth. Add the sumac and mix together.
- Spread half the cheese mixture on one slice of the bread. Sprinkle with dill. Top with a layer of thinly sliced celery. Top the celery with a layer of cucumber slices. Season if desired with salt and pepper and sprinkle on more dill. Spread the remaining cheese over the top slice of bread and sprinkle the walnuts over the cream so that they stick. Reverse the top slice onto the cucumber layer, press the sandwich gently (not too hard or the cream will ooze out), cut in half and serve.

Tips:
- Choose the right cucumbers: For the best flavor and texture, use fresh, crisp cucumbers. English or Persian cucumbers are ideal.
- Drain the cucumbers well: After grating the cucumbers, be sure to drain them thoroughly to remove excess moisture. This will help prevent the dip from becoming watery.
- Use a high-quality goat cheese: The goat cheese is a key ingredient in this dip, so it's important to use a good quality cheese. Look for a goat cheese that is creamy and flavorful.
- Don't overmix the dip: Overmixing the dip will make it tough and grainy. Mix the ingredients together just until they are well combined.
- Serve the dip immediately: This dip is best served immediately after making it. However, it can be stored in the refrigerator for up to 2 days.
Conclusion:
This cucumber goat cheese dip is a delicious and refreshing appetizer or snack. It's easy to make and can be tailored to your liking by adding different herbs, spices, or vegetables. So next time you're looking for a healthy and tasty dip, give this cucumber goat cheese dip a try!
