This is nice for a change on a hot summer day. Easy to make, I made this ahead and just put into the fridge until we were ready to eat. This came from Taste of Home magazine.

3 medium cucumbers
1 (6 ounce) can tuna, flaked
2 hard-boiled eggs, chopped
1/2 cup cheddar cheese, shredded
1/2 cup celery, diced
1/4 cup mayonnaise or 1/4 cup salad dressing
2 tablespoons sweet pickle relish
1 tablespoon onion, finely chopped
1 teaspoon lemon juice
1/2 teaspoon salt

Steps:

  • Cut cucumber in half lengthwise; remove and discard seeds.
  • Cut a thin slice from bottom if necessary so they sit flat.
  • In a bowl, combine the remaining ingredients.

1 can (6 ounces) tuna, drained and flaked
2 hard-boiled large eggs, chopped
1/2 cup shredded cheddar cheese
1/2 cup diced celery
1/4 cup Miracle Whip

6 ounces sushi tuna
1 teaspoon chopped chives
1/2 teaspoon chopped capers
1 teaspoon chopped shallots
1 lemon, juiced
1-ounce extra-virgin olive oil
Salt
Freshly ground black pepper
3 to 6 cucumbers (to make 6 cucumber "boats")
1-ounce American farmed black caviar
6 parsley sprigs

Steps:

  • With a heavy sharp knife, chop tuna into very small slices. In a mixing bowl, combine tuna, chives, capers, shallots, lemon juice, oil, salt and freshly ground pepper and chill for 1 hour. While tuna is chilling, prepare cucumber boats. Peel cucumber and cut into 2-inch long cylinders. With a teaspoon, scoop out the seeds from inside the cucumber disk without touching the very bottom of the cucumber. (In other words, leave a "bottom" in the hollowed-out center of the cucumber.)
