1/2 cup fat-free plain yogurt
1/2 cup chopped cucumber
2 teaspoons chopped fresh mint leaves
1 teaspoon fresh lemon juice
1 box (9 oz) frozen chopped spinach
1 1/4 lb lean (at least 93%) ground turkey
1/4 cup fat-free plain yogurt
1 teaspoon dried oregano leaves, crushed
1/2 teaspoon garlic salt
1/4 teaspoon pepper
5 thin slices medium tomato, halved
5 whole-grain pita bread halves (6 inch)

Steps:

  • Set oven control to broil. In medium bowl, mix Cucumber Sauce ingredients; cover and refrigerate until ready to use.
  • Cook spinach as directed on box; cool slightly. Squeeze to drain well. In large bowl, mix cooled spinach, turkey, 1/4 cup yogurt, the oregano, garlic salt and pepper. Shape into 5 oval patties, each about 1/2 inch thick. On broiler pan, place patties. Broil with tops about 5 inches from heat 10 to 12 minutes, turning once, until thermometer inserted in center of burgers reads 165°F.
  • Place 2 tomato slice halves in pita pocket halves; place burgers over tomato slices. To serve, top each burger with about 3 tablespoons sauce.

I wanted a burger but something more healthy than beef, & with a twist. I came up with these & they're great!

1 lb lean ground turkey
1/2 cucumber
1 pinch garlic salt
1 pinch black pepper
1 pinch rosemary
1 pinch thyme
1 teaspoon lemon juice

Steps:

  • Dice cucumber in small sqaures & place in small bowl.
  • Mix all seasonings and lemon juice into cucumbers.
  • Pour cucumber mix into bigger bowl and add gound turkey.
  • Smash & mix together with hands & then form into patties.
  • You can either use grill or spray frying pan with non-stick oil and heat on low-medium heat.
  • Cook burgers 4-5 minutes on each side or untill done & eat with favorite bread or buns, we used pumpernickel rolls & it was amazing!

Tips:

  • For the best flavor, use fresh, ripe cucumbers with firm flesh and no blemishes.
  • Shred the cucumbers with a box grater or a food processor fitted with a shredding blade. This will help release their moisture and make them easier to combine with the other ingredients.
