Cucumbers in vinegar are a classic side dish due to their tangy and slightly sweet flavor. Additionally, they add a nice crunch to salads and sandwiches. Often prepared using Kirby cucumbers, there are several other varieties of cucumber which work well for pickling, including Persian cucumbers and Japanese pickling cucumbers. Regardless of the type used, cucumbers must be cleaned and sliced before being soaked in a vinegar solution. Other ingredients which can be added to enhance the flavor of the vinegar solution include sugar, water, spices, and herbs.
