CURRIED BEEF WITH WINTER VEGETABLES

Curried Beef with Winter Vegetables image

The UK has a large Indian/Pakistani population, so curry is a popular meal where I live. I don't like hot curries, but mild ones are a nice change. This is a mild curried beef recipe with root vegetables. It's very filling and goes nicely with brown basmati rice. Chinese Five Spice is a mixture of aniseed, cinnamon, fennel, pepper, and cloves.

CURRIED GROUND BEEF AND BEANS

Curried Ground Beef and Beans image

My mom made this all the time. My dad and I loved it. It is so simple to make it was one of the first things I made on my own. The basic recipe has only four ingredients. You can customize to your own taste. I would try it first the way it is and modify as you see fit. I sometimes add onion and garlic when browning meat. I also have some nice hot curry that I mix with my regular curry to spice it up a bit.

Categories     Curries

Time 20m

Yield 4 serving(s)

Number Of Ingredients 4

1 lb ground beef
1 (10 3/4 ounce) can tomato soup (I use Campbell's )
1 (15 ounce) can dark red kidney beans (undrained)
1 tablespoon curry powder (very the amount depending on your taste)

Steps:

  • Brown the ground beef in a 2 1/2 to 3 quart pot. Drain Fat.
  • Stir in curry powder and heat for one minute.
  • Add tomato soup and kidney beans.
  • Simmer all for about 10 minutes stirring occasionally.
  • Serve alone in a bowl like chili or over rice.

Tips:

  • Choose the Right Cut of Beef: Opt for a tender cut like chuck roast, top sirloin, or flank steak. These cuts can withstand the long cooking time and will become melt-in-your-mouth tender.
  • Enhance the Flavor of the Meat: Before cooking, marinate the beef in a mixture of yogurt, spices, and herbs. This will infuse the meat with flavor and make it extra juicy.
  • Use a Variety of Bitter Greens: Don't limit yourself to just one type of bitter greens. Experiment with different varieties like dandelion greens, kale, collard greens, or mustard greens. Each type offers a unique flavor and texture.
  • Don't Overcook the Greens: Bitter greens can become tough and bitter if overcooked. Cook them just until they are wilted and tender, about 5-7 minutes.
  • Balance the Flavors: The combination of bitter greens and curry can be overpowering. Balance the flavors by adding a touch of sweetness from honey or coconut milk and a squeeze of citrus.

Conclusion:

Curried beef and bitter greens is a delicious and nutritious dish that combines the bold flavors of curry with the health benefits of bitter greens. By following these tips, you can create a restaurant-quality curry that will impress your family and friends. So, put on your apron, gather your ingredients, and let's get cooking!
