Steps:

  • Heat oil in a medium saucepan over medium. Cook onion, stirring often, until softened and golden brown, 8-10 minutes. Add garlic, ginger, curry powder, and red pepper flakes and cook, stirring, until fragrant, about 2 minutes. Add lentils and cook, stirring, 1 minute. Add tomatoes, ½ cup cilantro, a generous pinch of salt, and 2½ cups water; season with pepper. Set aside ¼ cup coconut milk for serving and add remaining coconut milk to saucepan.   • Preheat the oven to 400 degrees F. Heat 2 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the ginger and 2 minced garlic cloves; cook, stirring, until golden, about 1 minute. Add 1 tablespoon curry powder and the tomato paste and cook, stirring, until the ginger and garlic are well coated, about 1 minute.
  • Add the lentils, carrots, leeks and 7 cups water. Bring to a boil, then reduce the heat so the liquid simmers. Season with 3/4 teaspoon salt and a few grinds of pepper.   • Saute onion for 5 minutes
  • Hit the "Saute" button on your Instant Pot. Add olive oil. When hot, add the onions. Saute until transluscent, about 5 minutes. Add the ginger and curry powder and cook, stirring, until aromatic, about 30 seconds.

2 cups onions, chopped

2 tablespoons olive oil
1 large onion, thinly sliced
5 teaspoons curry powder
1/4 teaspoon cayenne pepper
5 cups vegetable broth
1 lb swiss chard, tough stalks removed, coarsely chopped
2 cups about 14 ounces dried red lentils
1 (15 ounce) can chickpeas, rinsed and drained
1 teaspoon salt
6 tablespoons thick Greek yogurt, thinned with 2 T. water
1 jalapeno pepper, stemmed and thinly sliced
1 lime, cut into six wedges

Steps:

  • Heat oil over medium heat. Add onion. Cook, stirring frequently, until light gold, about 10 minutes.
  • Stir in curry and cayenne. Add 4 cups broth and chard. Increase heat and bring to a boil, stirring, until chard is wilted.
  • Stir in lentils and chickpeas. Lower heat to low. Cover and simmer 16 - 18 minutes, stirring twice, until lentils are tender.
  • Remove from heat. Puree half of it; return to pot. Stir in last cup of broth and salt. Warm over low for 2 minutes.
  • Put into bowls. Top with thinned yogurt. Garnish with slices of jalapeno and lime.

2 tablespoons canola oil
1 cup onion, finely chopped
3 garlic cloves, minced
1 cup mushroom, finely chopped
2 cups carrots, diced
1 1/2 cups celery, diced
1 (15 ounce) can diced tomatoes (petite diced is better)
1 lb lentils, cleaned and rinsed
4 cups chicken broth
3 -4 cups water
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
1 dash cayenne pepper
2 tablespoons pineapple juice
1 teaspoon paprika
1 tablespoon curry powder (I used red curry)
1/4 teaspoon turmeric powder
1/2 cup couscous
1/4 cup frozen chopped spinach

Steps:

  • In a large pot sweat the onion, garlic, and mushrooms in canola oil until soft.
  • Add carrots, celery, lentils, salt, and spices and saute for 2-3 minutes.
  • Add chicken broth, tomatoes, and 2 cups of water. (later on add last 2 cups of water as needed). Simmer until lentils are al dente about 15-20 minutes.
  • Add pineapple juice and spinach simmer until lentils are done about 5-10 more minutes.
  • Take soup off the heat and add couscous. Let sit 5-10 mins then serve.

2 cups red lentils, sorted and rinsed
1 quart low sodium vegetable broth
4 cups water
1 large onion, finely chopped
4 celery ribs, finely chopped
2 large carrots, finely chopped
2 garlic cloves, minced
1/4 cup cilantro, chopped
1 tablespoon curry powder
1 teaspoon ground cumin
2 tablespoons lemon juice

Steps:

  • 1. Bring lentils, vegetable broth, and 4 cups water to a simmer in a large pot. Periodically skim away foam that rises to the top. Reduce to medium-low, cover, and simmer for 5 minutes, stirring occasionally.
  • 2. Add onion, celery, carrots and garlic, simmer uncovered for 20 minutes.
  • 3. Add cilantro, curry powder amd cumin and simmer for an additional 20 minutes or until lentils are soft.
  • 4. Season with salt and pepper to taste and stir in lemon.

1 1/2 cups red lentils
4 cups water
1 sweet potato
1/2 teaspoon sea salt
4 tablespoons extra virgin olive oil
1 medium onion (diced)
2 garlic cloves (diced)
3 teaspoons turmeric
2 teaspoons cumin (ground)
1 1/4 teaspoons coriander (ground)
1/8 teaspoon cayenne pepper (optional)

Steps:

  • Rinse the lentils in a strainer under cold running water (preferably filtered). Pick them over and discard any small stones. Put the water and salt in a medium-sized sauce pan. Bring to boil. Add the rinsed lentils, reduce heat and cook, uncovered, for 20 minutes stirring occasionally. Scoop off any excess foam on the top and discard.
  • Peel (optional) the sweet potatoes and dice into 1/2 inch pieces. Add to lentils and continue cooking.
  • Dice the onions and and garlic. In a small skillet, heat the olive oil, onions, garlic and spices over low heat. Cook and stir for 5 minutes or until the onions have become soft and translucent.
  • Add spice mix to the soup and continue to cook and occasionally stir until potatoes are tender, about 10 minutes. Add more water if soup is too thick.
  • Tip for kid-friendly. Reduce or don't add the garlic, onions and/or cayenne if you have a spice-sensitive kid. And if your kid is picky on texture, you can put the soup in a blender (make sure you hold the top down firmly so you don't have a hot-soup explosion) and a few ice-cubes and serve 'smooth-style'.

1/2 pound lean country smoked ham
3 medium-size carrots
1/2 pound green lentils
2 tablespoons butter
1 cup finely chopped onions
1 tablespoon finely chopped garlic
2 tablespoons curry powder
5 cups fresh chicken broth or canned
2 cups water
1 bay leaf
3 sprigs fresh thyme or 1 teaspoon dried
Salt to taste
1 tablespoon red-wine vinegar
2 tablespoons finely chopped coriander

Steps:

  • Remove most of the fat from the ham and cut into 1/2-inch cubes.
  • Trim and scrape the carrots and cut them into 1/4-inch cubes.
  • Pick over the lentils, wash them and drain into a colander.
  • Heat 1 tablespoon of the butter in a kettle or saucepan. Add the ham, carrots, onions, garlic and curry powder. Cook briefly over medium heat, stirring, until the onions are wilted.
  • Add the lentils, 4 cups of the chicken broth, water, bay leaf, thyme and salt. Bring to a boil, and simmer for 24 to 30 minutes, stirring occasionally.
  • Remove one cup of the soup, with more lentils than liquid, and set aside. Discard the bay leaf and thyme sprigs.
  • With a potato masher or wire whisk stir the soup briskly to mash the lentils, and return the soup to a boil. Add the remaining cup of chicken broth, the reserved lentils, the vinegar and the remaining butter. Check for seasoning and serve, sprinkled with the coriander.

CURRIED LENTIL AND LIME SOUP

Somebody was requesting a lentil soup recipe without tomatoes. Here is the one I know. I made it last winter and I really liked it. The recipe says it's low-fat and the soup is definitely quick to throw together. I'm not sure if I used lime as stated or lemon, since I don't usually have lime at home, but do the rest of the ingredients. That's another good thing about this recipe; it uses storecupboard ingredients. I am already looking forward to prepare this soup again when it gets colder... You can use whatever curry paste you fancy. I used a korma paste. This soup freezes well, yet another advantage. I didn't use the yogurt, I tried it with the yogurt, but I preferred it without. However, I thought you might like it with that's why I didn't leave it out.

1 tablespoon hot curry paste
1 onion, finely chopped
2 garlic cloves, finely chopped
4 cm piece fresh gingerroot, peeled and finely chopped (1 1/2 in)
1 teaspoon cumin seed
200 g red lentils
1 1/2 liters chicken stock (2 1/2 pts) or 1 1/2 liters vegetable stock (2 1/2 pts)
50 g small sultanas (2oz)
1 lime, juice and zest of
salt and pepper
150 g plain fat-free yogurt
2 tablespoons chopped of fresh mint
4 naan bread (or chapattis, to serve) (optional)

Steps:

  • Place the curry paste, onion, garlic, ginger and cumin seeds in a large pan and cook gently together for 3 minutes.
  • Add the lentils and stock, bring to the boil and simmer gently for 20 minutes.
  • Add the sultanas and cook for a further 10 minutes.
  • Add the lime zest and juice, plus salt and pepper to taste (you probably don't need to add salt but check to make sure).
  • Ladle into bowls and top each serving with a large spoonful of yogurt (don't mix the yogurt) and a sprinkling of mint.
  • Serve with warm chapatis.
