Yield 3 cups

Number Of Ingredients 6

2 cups chicken stock or 2 cups chicken bouillon
2 small potatoes, peeled and diced
1 large carrot, peeled and sliced
1/2 cup celery, chopped
1/4 cup celery leaves
salt and pepper

Steps:

  • Bring stock or bouillon to a boil.
  • Add vegetables, salt and pepper and return to a boil.
  • Cover and simmer for 25 minutes.
  • Pour into a blender and liquefy.
  • Serve hot.
  • If soup is too thick, use milk substitute or bouillon to thin.

Tips:

  • Choose the Right Base: Depending on your dietary preferences, you can use a variety of bases for your dairy-free cream of chicken soup. Vegetable broth, almond milk, soy milk, or even coconut milk can all be used to create a creamy and flavorful base.
  • Use a Variety of Veggies: Don't limit yourself to just one or two vegetables. Experiment with different combinations to create a soup that's packed with flavor and nutrients. Try adding carrots, celery, onions, mushrooms, leeks, or even spinach.
  • Don't Skimp on the Herbs and Spices: Herbs and spices are what really bring your soup to life. Add a generous amount of dried or fresh thyme, rosemary, sage, or oregano. A pinch of nutmeg or cayenne pepper can also add a nice touch.
  • Use a Thickener: If you want a thicker soup, use a cornstarch or arrowroot slurry. Simply mix equal parts cornstarch or arrowroot powder with water until smooth, then whisk into the soup until it reaches your desired consistency.
  • Add Some Protein: For a more substantial soup, add some cooked chicken, tofu, or beans. This will give your soup a boost of protein and make it a more satisfying meal.

Conclusion:

With a little creativity and experimentation, you can easily make a delicious and creamy dairy-free cream of chicken soup. This versatile soup can be used in a variety of dishes, from casseroles and pot pies to soups and stews. So next time you're craving a comforting bowl of soup, give this dairy-free version a try. You won't be disappointed!
