These dairy- and egg-free waffles are both crisp and tender-and so simple to make. Be sure to use refrigerated soy milk instead of the shelf-stable kind: There are fewer additives, which can greatly affect the final texture and taste of a recipe.

Time 15m

Yield about 6 waffles

Number Of Ingredients 10

1 3/4 cups whole-wheat flour
1/4 cup sugar
1 teaspoon baking powder
1 tablespoon cornstarch
Kosher salt
1 1/2 cups unsweetened soy milk (refrigerated, not shelf stable)
1/2 cup vegetable oil
1 teaspoon pure vanilla extract
Cooking spray
Maple syrup, nut butter or fruit preserves, for serving

Steps:

  • Preheat a waffle iron to medium-high. Preheat the oven to 200 degrees F if using to keep cooked waffles warm.
  • Whisk together the flour, sugar, baking powder, cornstarch and 3/4 teaspoon salt in a large bowl. Whisk together the soy milk, oil and vanilla in a medium bowl. Pour the milk mixture into the flour mixture and gently stir until just incorporated (it is OK if there are some lumps).
  • Generously spray the top and bottom of the waffle iron with cooking spray. Fill each compartment almost completely, and spread the batter to the edges. Close the lid and cook until the waffles are golden brown and crisp, 6 to 7 minutes. Keep the cooked waffles warm in the oven or covered with foil on a plate while you make the remaining waffles. Serve with maple syrup, nut butter or fruit preserves.

Tips:

  • Use ripe bananas: The riper the bananas, the sweeter and more flavorful your waffles will be.
  • Mash the bananas well: Make sure to mash the bananas until they are completely smooth, with no lumps.
  • Use a good quality dairy-free milk: There are many different types of dairy-free milk available, so choose one that you like the taste of and that is also high in calcium and vitamin D.
  • Don't overmix the batter: Overmixing the batter will make your waffles tough. Mix just until the ingredients are combined.
  • Cook the waffles on a hot waffle iron: This will help to create crispy waffles with a fluffy interior.
  • Serve the waffles immediately: Waffles are best served fresh and warm. If you need to store them, let them cool completely and then freeze them in a single layer in an airtight container.

Conclusion:

This recipe for dairy-free whole wheat waffles is a delicious and healthy way to start your day. The waffles are made with simple ingredients that you probably already have on hand, and they can be easily customized to your liking.
