Time 30m

Yield Four servings

Number Of Ingredients 7

3 tablespoons olive oil
2 medium-size onions, peeled and sliced thin
1 1/2 pounds fresh dandelions, washed and stemmed
1 clove garlic, peeled and crushed
2 tablespoons fresh lemon juice
Coarse sea salt, to taste
4 lemon wedges

Steps:

  • Heat the olive oil in a 9- or 10-inch skillet over medium heat. Pat the onions dry between paper towels. Add the onions to the skillet and cook, stirring often, until golden, about 10 minutes. Transfer the fried onions with a slotted spoon to paper toweling to drain.
  • Blanch the dandelions in lightly salted boiling water until just tender, about 3 minutes. Drain, refresh under cold running water and squeeze out the excess water. Shred the dandelions and chop the reserved half-cooked onions. Heat the oil that remains in the skillet over medium heat. Add the dandelions, chopped onions and garlic and, stirring often, cook until mixture is thick and dandelions are soft to the bite (about 5 minutes). Stir in the lemon juice and season with salt to taste. Serve warm, sprinkled with the crisp onions and surrounded with lemon wedges.

Tips:

  • Choose tender dandelion greens: For the best flavor and texture, select young, tender dandelion greens. Avoid greens that are wilted, bruised, or have yellow or brown spots.
  • Wash the greens thoroughly: Dandelion greens can be gritty, so it's important to wash them thoroughly before using them. Rinse the greens in cold water several times, swishing them around to remove any dirt or debris.
  • Use a good quality olive oil: The olive oil you use in the dressing is important, as it will contribute to the overall flavor of the dish. Choose a good quality extra virgin olive oil that has a fruity, peppery flavor.
  • Don't overcook the greens: Dandelion greens cook quickly, so it's important not to overcook them. Cook them just until they are wilted, about 2-3 minutes.
  • Serve immediately: Dandelion greens are best served immediately after they are cooked. If you need to make them ahead of time, you can cook them and then store them in the refrigerator for up to 2 days. When you're ready to serve, reheat them gently over low heat.
