7 ounces caster (superfine) sugar
2 eggs, well beaten
3 ounces self-rising flour
4 ounces ground almonds
4 ounces milk
1 teaspoon vanilla extract
1 tablespoon boiling water
1/2 teaspoon baking powder
8 stoned prunes, chopped
4 ounces shelled walnuts, finely chopped and mixed with 2 tablespoons sugar
2 green apples, cored and sliced
3 tablespoons sugar
Ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F and butter a 10-inch round cake pan.
  • Cream together the butter, sugar, eggs, flour, almonds, milk, vanilla, boiling water and baking powder in a food processor, running it for 10 seconds. Run a spatula round the bowl and process for 5 seconds more. Pour into the prepared pan.
  • Scatter the prunes evenly on the batter. Spoon over walnut and sugar mixture. Arrange the apple slices on top of the walnuts. Bake for 45 minutes.

2 tablespoons granulated sugar
1/2 teaspoon pure vanilla extract
1 1/4 cups dried breadcrumbs
1/2 cup margarine, melted
1 cup whipping cream, whipped

  • Preheat oven to 450 degrees F, then butter a 1 1/2-quart ovenproof dish.
  • In a bowl, combine applesauce, sugar & vanilla extract.

1/4 cup butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups apples, peeled and grated
1/4 cup sugar
1 teaspoon cinnamon
1/2 cup nuts, chopped

Steps:

  • Preheat oven to 350°. Grease a 9x9-inch baking pan.
  • Cream butter and sugar together. Add egg and vanilla, beating well. Add flour, baking soda, and cinnamon, and blend well. Add grated apples and beat well by hand. Pour cake batter into prepared baking pan.
  • Combine all topping ingredients and sprinkle evely on top of cake batter. Bake at 350° for 40 minutes.
  • Remove cake from oven, and let cool. Cut 3 rows horizontal and 3 rows vertical (yielding 9 servings).

This is the recipe for my mum's apple cake, the best apple cake and maybe the best cake I've ever eaten. It's great to eat as a dessert with vanilla ice cream or whipped cream with chopped hazelnuts, or sprinkled with sherry or dessert wine. Can be frozen baked and reheated in a microwave. My mum translated this for me from her mother's Danish cookbook, Bo Bedre's Bagebog, by Lilian Kaufman 1966. The original recipe is called Reinette-Kage (Reinette Cakes).

3 -4 cooking apples (Reinette or Bramley)
200 g plain white flour
150 g white sugar or 150 g brown sugar
200 g butter or 200 g margarine
2 large eggs
1 1/2 teaspoons baking powder
1 dash vanilla essence
2 tablespoons lemon rind, grated (from half a lemon)

Steps:

  • Whisk the eggs, slowly adding sugar until the mix becomes a light and airy.
  • Melt the butter slowly without burning it (for example in the microwave) and let it cool down, and add it to the mixture, along with the grated lemon peel.
  • Mix the flour, vanilla essence and baking powder and add it to the mixture.
  • Line a large baking tin (lasagna dish) with greaseproof paper: cut the paper to 2" (5cm) larger on each side than the base of the tin, cut into each corner and press down into the tin.
  • Pour the mixture into the tin.
  • Peel and core the apples, cut into wedges (about 4mm thick at outside) and push them down vertically into the cake mix, so that the curved outsides face upwards towards you, and the sharp insides point downwards into the cake, like teeth. The slices should be completely buried in the cake mix, or they will burn.
  • Sprinkle a little sugar on top of the apple slices.
  • Bake at 175'C for 45 minutes. Allow to cool partly in the tin before removing to cool down on a wire rack.

4 c homemade unsweetened, chunky applesauce
8-10 sweet macro hearts
1 c sweet bread crumbs
1 pt heavy cream for wipping
1/2 c sugar
3 slices of dry toast
1 tsp butter

Steps:

  • 1. First make the sweet bread crumbs. Take 3 slices very dry toast, crush it in a plastic bag. Pour ½ cup sugar in a skillet and 1 teaspoon butter and heat to melt. As soon as the sugar is melted reduce heat and pour the crumbs into the skillet and mix quickly then pour onto a baking sheet to cool.
  • 2. Wip the heavy cream and put in the fridge. in a half gallon bowl cover the bottom with 1 cup applesauce, then crush 4 of the macros and add some of the crumbs, repeat layering and top with cold wipcream...mmmmmmmm
  • 3. Serve cold..

  • 1. Heat oven to 325*F.Spray bottom of 9 inch springform pan with cooking spray.
  • 2. In large bowl,beat butter and granulated sugar with a hand electric mixer,beat on high 1 minute.Add eggs and almond extract,beat on medium speed about 10 seconds.Add your Bisquick mix;beat on medium speed about 30 seconds or until combined.
  • 3. Spread batter in bottom of pan.Press apple pieces,cut side down,into batter.Bake 1 hour to 1 hour and 10 minutes or until apples are soft and cake is golden brown.
