1 1/4 cups all-purpose flour
1 cup natural bran
1/3 cup brown sugar
1 tablespoon baking powder
3/4 teaspoon cinnamon
1 egg
1 ripe banana, mashed
1/3 cup molasses or 1/3 cup honey
1/3 cup butter or 1/3 cup margarine, melted
3/4 cup milk
1/3 cup chopped dates
1/3 cup chopped dried apricot

Steps:

  • Stir together the flour, bran, brown sugar, baking powder and cinnamon.
  • In a separate bowl, beat the egg lightly.
  • Stir in the mashed banana, molasses, butter and milk.
  • Stir the flour mixture into the milk mixture just until blended.
  • Mix in the dates and apricots.
  • Spoon the batter into greased muffin cups.

1/2 cup chopped dates
1/2 cup boiling water
1/4 cup shortening
1/2 cup sugar
1 egg
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • Place dates in a small bowl and add boiling water; let stand for 10 minutes (do not drain). Meanwhile, in a small bowl, beat shortening and sugar until crumbly, about 2 minutes. Beat in egg. , Add dates; beat on low speed until blended. Combine the flour, baking powder, baking soda and cinnamon; stir into date mixture with a wooden spoon just until blended. 1 cup buttermilk
1/4 cup canola oil
1 teaspoon vanilla
1 egg
1 1/4 cups whole wheat flour

3 tablespoons packed brown sugar
2 tablespoons butter or margarine, melted

  • Heat oven to 400°F. Grease bottoms and sides of 12 regular-size muffin cups with shortening or cooking spray (do not use paper baking cups).

1 cup boiling water
2 cups all-purpose flour
¾ cup white sugar
1 teaspoon baking soda
½ teaspoon salt
¼ cup melted butter
¼ cup vegetable oil
1 cup buttermilk
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12 cup muffin pan, or line with paper muffin cups. Place apricots into a small bowl, and pour the boiling water over them. Let stand for 5 minutes.
  • In a medium bowl stir together the flour, sugar, baking soda and salt. In a separate bowl, whisk together the melted butter, oil, buttermilk and egg.
