DATE BALLS

Date Balls image

A holiday tradition. My mother made these date balls every year at Christmas time. They may be stored in a plastic or glass container. If the weather is warm, keep them in the refrigerator. Make sure balls are cooled thoroughly before storing.

COCONUT DATE BALLS

Coconut Date Balls image

There are a few classic recipes I absolutely have to pull out every Christmas, and this is one of those. These chewy balls are surprisingly crunchy and they look so pretty on a holiday candy tray.

Provided by Taste of Home

Categories     Desserts

Time 30m

Yield about 5 dozen.

Number Of Ingredients 8

1/2 cup butter
1 cup chopped dates
3/4 cup sugar
2 eggs, beaten
1 cup chopped pecans
1 cup crisp rice cereal
1 teaspoon vanilla extract
2 cups sweetened shredded coconut

Steps:

  • In a saucepan, melt butter over low heat. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10-15 minutes or until thermometer reads 160°. Remove from the heat; stir in the pecans, cereal and vanilla. When cool enough to handle, shape into 1-in. balls; roll in coconut. Place on waxed paper-lined baking sheets. Tips:

  • Use a food processor to finely chop the dates and pecans. This will help them blend more easily with the other ingredients and create a smoother texture for the balls.
  • If the mixture is too dry, add a little bit of milk or water until it reaches the desired consistency. You want the mixture to be able to hold its shape when rolled into balls, but not be too wet.
  • Chill the balls for at least 30 minutes before coating them in chocolate. This will help the chocolate set more quickly and evenly.
  • If you don't have time to chill the balls, you can also freeze them for about 15 minutes. This will help them firm up quickly so that you can coat them in chocolate.
  • Use a variety of toppings to decorate the balls. Some popular options include chopped nuts, sprinkles, coconut, and candy pieces.

Conclusion:

Date pecan balls are a delicious and easy-to-make treat that is perfect for any occasion. They are made with a simple mixture of dates, pecans, oats, and honey, and then coated in chocolate. Date pecan balls can be enjoyed on their own or served as a dessert. They are also a great gift idea for friends and family. With so many variations and topping options, you can easily customize these balls to your own taste preferences. So next time you are looking for a sweet and satisfying snack, give date pecan balls a try!
