  • Place the pitted dates and pecans in the bowl of a large food processor. Blend on high until a thick "dough" is formed and the mixture feels sticky.
  • Scoop about 1-2 tablespoons of the mixture and use your hands to roll it into a ball. If you have time you can let them set in the fridge for 5 minutes.
  • Roll the energy bites into desiccated or shredded coconut pressing gently so they adhere. Makes about 12-14 bites.

1 cup pecans
1/2 cup flaked coconut
1 cup pitted dates
1/4 cup coconut oil
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
Kosher salt
2 ounces dark chocolate, melted

Steps:

  • Add pecans and flaked coconut to a food processor, and pulse until they are the consistency of a coarse meal. Add pitted dates and coconut oil. Pulse a few times, then add vanilla, cinnamon and 2 pinches of salt. Process until everything comes together. If you see any large chunks of date, break the mixture up with a spatula, and pulse until they are broken up. Add a bit more coconut oil if the mixture seems dry.
  • Using a tablespoon, scoop out equal portions of the mixture, roll into balls and place on a parchment-lined baking sheet. Drizzle bites with melted chocolate, then sprinkle over various toppings to taste. Store bites in the refrigerator for 1 to 2 weeks.

1/4 cup sugar
1 1/2 cups water
1 cup pecans, finely chopped
3/4 cup unsalted butter
1 cup light brown sugar
1 3/4 cups sifted unbleached all-purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats

Steps:

  • To prepare filling, mix together dates, sugar and water in saucepan and cook over low heat, stirring constantly, until thickened (about 10 minutes). Allow to cool. Add pecans.
  • Preheat oven to 400 degrees. Cream butter and brown sugar. Combine remaining ingredients and stir into butter mixture until well blended. Press half of the filling into a 9x13-inch glass baking dish. Spread with cooled filling. Cover with remaining filling mixture, patting lightly. Bake until lightly browned (approximately 25 to 30 minutes). Cool and cut into bars.

2 cups white sugar
1 cup milk
¼ cup butter
1 cup chopped dates
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Stir sugar, milk, and butter together in a saucepan; bring to a boil without stirring once the boiling begins. Heat until a small amount of syrup dropped into cold water forms a rigid ball or until the mixture reaches 250 degrees F (120 degrees C), about 20 minutes. Immediately remove saucepan from heat and stir dates, pecans, and vanilla into the milk mixture.
  • Thoroughly wet a piece of cheesecloth and lay out onto a flat work surface. Pour the candy mixture into the middle of the cloth and roll the cloth around it to shape into a log.

1 1/2 cups old-fashioned oatmeal
1/2 cup all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup (1 stick) unsalted butter, room temperature
2/3 cup firmly packed dark brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla
3/4 cup chopped pitted dates (about 5 ounces)
3/4 cup chopped pecans (about 3 ounces)
2/3 cup semisweet chocolate chips

Steps:

  • Preheat oven to 375°F. Grease 2 heavy large cookie sheets. Mix first 4 ingredients together in medium bowl. Using electric mixer, cream butter and both sugars in large bowl until light and fluffy. Beat in egg and vanilla. Mix in oatmeal mixture. Stir in remaining ingredients.
