Time 2h30m

Yield 24

Number Of Ingredients 15

48 chocolate wafer cookies, crushed (about 2 1/2 cups)
6 tablespoons butter, melted
2 teaspoons corn syrup or honey
2 packages (8 oz each) cream cheese, softened
3/4 cup granulated sugar
2 teaspoons vanilla
2 tablespoons coffee-flavored liqueur, if desired
2 eggs
6 oz chocolate (I like to use 60% cocoa chocolate bars), melted and cooled
1/2 cup Original Bisquick™ mix
3/4 cup milk
2 cups whipping cream
2 tablespoons powdered sugar
6 oz semisweet chocolate chips, melted and cooled slightly
20 to 24 Snickers™ fun-size candy bars, frozen and then chopped

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • In small bowl, mix Crust ingredients. Divide mixture among cups. Using fingertips, firmly press in bottom of each cup, making sure crumbs are firmly packed.
  • In large bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in granulated sugar until fluffy. Beat in vanilla and liqueur. Beat in eggs, 1 at a time, until well blended. Pour in the cooled (but still pourable) melted chocolate, and beat until there are no more streaks and batter looks chocolaty. Add Bisquick mix, and beat until incorporated. Pour in milk, and beat until smooth and creamy.
  • Divide batter evenly among cups (cups will be almost full).
  • Bake 30 to 35 minutes or until centers are firm. Cool 15 minutes (cheesecake centers will sink while cooling). Refrigerate in pan at least 45 minutes.
  • In chilled small bowl, beat whipping cream on medium speed 30 seconds; gradually increase speed to high, and beat until stiff peaks form. During last minute, beat in powdered sugar. Remove 3/4 cup of the whipped cream, and place in bowl; set aside. Add all but 2 tablespoons (reserve for drizzling) of the melted chocolate to the remaining whipped cream, and beat until there are no more chocolate streaks.
  • Remove cheesecakes from refrigerator and, using butter knife, gently pop them out of pan. Carefully remove wrappers, and top each chilled cheesecake with large dollop of chocolate cream and then a little dollop of whipped cream. Just before serving, garnish with chopped candy bars and a drizzle of melted chocolate. Serve chilled.

  • Bake in the preheated oven at 200°C/400°F on the middle rack for 10 minutes. Then transfer to lowest rack, bake another 10 minutes and transfer back to middle rack for the last 5-10 minutes. Your pizza should be nicely browned and the dough not sticky anymore.

DEEP-DISH CHEESE PIZZA

Deep-Dish Cheese Pizza image

For this take on deep dish pizza, we use a 9-inch cake pan to create a thick a chewy crust with deliciously crispy browned edges.

Provided by Food Network Kitchen

Categories     main-dish

Time 2h20m

Yield One 9-inch deep-dish pizza (plus extra dough)

Number Of Ingredients 16

1 1/2 teaspoons active dry yeast
1 1/2 cups warm water (about 110˚ F)
2 cups bread flour
1 3/4 cups all-purpose flour, plus more for kneading
2 teaspoons sugar
2 teaspoons kosher salt
2 tablespoons extra-virgin olive oil, plus more for the bowl and pan
1 15-ounce can crushed tomatoes
1 small clove garlic, grated
1 teaspoon extra-virgin olive oil
1/4 teaspoon dried oregano
Pinch of sugar, plus more if needed
Kosher salt and freshly ground pepper
1/4 cup grated Parmesan cheese
2 ounces fresh mozzarella cheese, torn
6 ounces sliced low-moisture mozzarella cheese

Steps:

  • Make the dough: Sprinkle the yeast over the hot water in a small bowl. Let stand until dissolved and slightly foamy, 5 to 10 minutes.
  • Meanwhile, whisk the bread flour, all-purpose flour, sugar and salt in a large bowl and make a well in the center. Pour the yeast mixture into the well and add the olive oil. Stir with a wooden spoon until a shaggy dough forms.
  • Turn the dough out onto a lightly floured surface, dust the dough with flour and knead, dusting with more flour as needed, until very smooth and elastic but still slightly tacky, 3 to 5 minutes.
  • Transfer the dough to an oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours. Divide the dough into two 1-pound balls; wrap one ball in plastic and refrigerate for up to 2 days or freeze for up to 3 months. Bring to room temperature before using. Transfer the other ball of dough to a 9-inch round cake pan coated with 2 tablespoons olive oil. Cover and let the dough rise again until almost spread to the edges of the pan, about 1 hour.
  • Make the pizza sauce: Combine the tomatoes, garlic, olive oil, dried oregano, sugar and a pinch each of salt and pepper in a medium bowl; season with more salt and sugar if needed. (Makes about 1 1/2 cups.)
  • Make the pizza: Preheat the oven to 500˚ F (use the convection setting, if available) with a pizza stone, baking steel or inverted large baking sheet in the lower third of the oven. Press the dough to reach the edge of the pan, then press the dough up the sides to create a lip 1/2 to 3/4 inch higher than the center of the dough. Top the dough with 2 tablespoons Parmesan and sliced mozzarella, leaving a 1/2-inch border around the edge. Spread a heaping 1/2 cup pizza sauce over the cheese, almost to the edge. Sprinkle with the remaining 2 tablespoons Parmesan.
  • Place the pan on the hot stone and bake the pizza until the crust is deep golden brown and any cheese poking through the sauce is lightly browned, 12 to 15 minutes. Let cool 5 minutes, then loosen the edges with a small offset spatula and remove the pizza to a cutting board.

This is a very flavorful dish that my brothers named Death By Garlic. Warning: If one person has this, you'd better all have some! Beautiful flavor and zest. (I like to brown kielbasa sausage and toss it in, then sprinkle feta cheese on top. Yum!)

CHEESE PIZZA

Cheese Pizza image

This plain pie tastes anything but basic. Start with my homemade pizza dough and marinara sauce recipes, so you can make this plus many more pizzas. I put the cheese down first to protect the dough from getting soggy from the sauce.

Provided by Food Network

Categories     main-dish

Time 2h15m

Yield 1 pizza

Number Of Ingredients 7

All-purpose flour, for the surface
One 6-ounce ball pizza dough, at room temperature
3 to 4 ounces low-moisture mozzarella, sliced
1 tablespoon Sicilian (or regular dried) oregano (see Cook's Note)
1/2 cup marinara sauce, at room temperature
Olive oil, for topping, optional
Freshly grated Parmesan, for topping, optional

Steps:

  • Place a pizza stone in the center rack of the oven. Preheat the oven to 475 degrees F for 1 to 2 hours before you're ready to bake the pizza to get the stone nice and hot.
  • Generously sprinkle a flat work surface with flour. Use a rolling pin to stretch the dough into an 11-inch circle. Transfer the dough to a lightly floured pizza peel or unrimmed baking sheet so it can slide right onto the pizza stone in the oven. (I use the bottom of a baking sheet.)
  • Top with the mozzarella, sprinkle with the oregano, then gently spread the marinara sauce on top, leaving about a 1/2-inch border around the edges for the crust (my favorite part!).
  • Turn off the oven and turn on the broiler. Use the peel or baking sheet to slide the pizza onto the pizza stone. The heat from the stone will cook the bottom of the pizza and the boiler will char and cook the top, mimicking a Neapolitan pizza oven. Bake until the cheese is melted and the crust is evenly crisped, 5 to 6 minutes. Drizzle with olive oil and sprinkle with Parmesan if desired. Slice the hot pizza and serve immediately.

Tips:

  • Use high-quality ingredients. The better the ingredients, the better the pizza will be. This means using fresh, flavorful cheese, a flavorful sauce, and a crispy crust.
  • Don't overload the pizza with toppings. Too many toppings will make the pizza soggy and difficult to cook evenly.
  • Bake the pizza at a high temperature. This will help to create a crispy crust and prevent the pizza from becoming soggy.
  • Use a pizza stone or baking sheet. This will help to distribute the heat evenly and prevent the pizza from burning.
  • Let the pizza cool for a few minutes before slicing and serving. This will help to prevent the cheese from stretching and becoming stringy.

Conclusion:

With a little practice, you can make a delicious Death by Cheese pizza at home. Just be sure to use high-quality ingredients, don't overload the pizza with toppings, and bake it at a high temperature. With a little effort, you can enjoy a delicious, cheesy pizza that will satisfy your cravings.
