DECORATING ICING

Yield Makes about 3 cups

Number Of Ingredients 6

1 (1-lb) box confectioners sugar
4 teaspoons powdered egg whites (not reconstituted)
1/3 cup water
1 tablespoon fresh lemon juice
1 teaspoon vanilla
Food coloring (optional)

Steps:

  • Beat together all ingredients except food coloring in a large bowl with an electric mixer at moderate speed until just combined, about 1 minute. Increase speed to high and beat icing, scraping down side of bowl occasionally, until it holds stiff peaks, about 3 minutes in a standing mixer or 4 to 5 minutes with a handheld. Beat in food coloring (if using). If you plan to spread (rather than pipe) icing on cookies, stir in more water, 1 teaspoon at a time, to thin to desired consistency.

Tips:

  • Use the right consistency of icing. If the icing is too thick, it will be difficult to spread and may cause peaks. If the icing is too thin, it will not hold its shape and may drip.
  • Chill the cake before icing it. This will help the icing to set more quickly and will prevent it from melting.
  • Use a clean spatula or knife to spread the icing. A dirty spatula or knife can introduce crumbs or other particles into the icing, which can ruin the appearance of the cake.
  • Start by spreading a thin layer of icing over the entire cake. This will help to seal in the crumbs and create a smooth surface for the next layer of icing.
  • Use a piping bag or a zip-top bag with the corner snipped off to create designs with the icing. You can also use a spoon or a fork to create simple designs.
  • Let the icing set completely before serving the cake. This will help to prevent the icing from smudging or running.

Conclusion:

With a little practice, you can create beautiful and delicious cakes that will impress your friends and family. Decorating cakes with icing is a fun and creative way to express yourself. So get creative and have fun!
