1 teaspoon ground black pepper

Time 37m

Yield approximately 32 pickle spears

Number Of Ingredients 5

Peanut oil
1 quart dill pickles
1 cup buttermilk
2 cups plain cornmeal
1 tablespoon kosher salt, plus more, if desired

Steps:

  • Place enough peanut oil in a 4 to 5-quart cast iron Dutch oven to come halfway up the side of the pot. Place over medium-high heat and bring to 390 to 400 degrees F.
  • Remove the pickles from their brine and cut lengthwise into quarters, like spears. Lay the spears on a sheet pan lined with paper towels and pat them dry.
  • Place the buttermilk in 1 shallow dish and mix together the cornmeal and salt in a separate dish. Dip each pickle, 1 at a time, first into the buttermilk, then into the cornmeal and then repeat. Carefully place each spear into the hot oil and cook until golden brown, approximately 2 minutes. You can fry 3 to 4 pickles in the pot at a time. Adjust the heat, if necessary, in order to maintain a constant temperature of 390 to 400 degrees F. Transfer the pickles to a cooling rack set in a half sheet pan and allow to cool for 5 minutes before eating. Season with additional salt, if desired.

PERFECT CRUNCHY DEEP FRIED PICKLES

Perfect Crunchy Deep Fried Pickles image

It's taken me WAY too long to replicate a good crispy, crunchy fried pickle recipe! Most batters I try usually come out soggy and limp. But with the incorporation of panko. It makes this super crunchy! And stay that way too! I prefer to dip mine in either Ranch, or some french onion dip. Like Bison! So if you like a super crunch...

Provided by Anthony Nicometi Jr

Categories     Other Appetizers

Time 20m

Number Of Ingredients 12

pickles (sliced or whole cut into slices of desired thickness)
panko
oil for frying
BATTER
1 c all-purpose flour
1 c milk
1 egg
1 1/2 tsp baking powder
1/2 Tbsp smoked paprika
1 tsp black pepper
2 small dash(es) hot sauce (nothing too over bearing!)
1 Tbsp dill pickle juice

Steps:

  • 1. Mix together all the ingredients for the 'Batter' and allow to sit aside for 5 mins.
  • 2. Cut your pickles into thin or thick slices. (Thinner does work better. But not paper thin.) Then dry them with some paper towel to remove the excess moisture. Place a few in the batter, then toss in the panko, and toss until fully coated. Repeat until all the pickles are cut.
  • 3. Place into a deep fryer, or pot of oil at 375 until a golden brown color is formed. Salt lightly immediately after they come out and enjoy dipping in some Ranch, or my favorite...French Onion Dip! :)

AWESOME DEEP FRIED PICKLES

Awesome Deep Fried Pickles image

When the pandemic first has us locked inside in April of 2020, we started creating the appetizers we would sometimes order when going out. These were great with our "Quarantini" cocktails. Summer's pickles, thick cut, canned, bread and butter style. Battered. Home made ranch dressing.

Provided by Amy CooksToo

Categories     Vegetable Appetizers

Number Of Ingredients 10

1 c flour, sifted
1/4 c cornstarch
1 Tbsp baking powder
To taste salt and pepper, creole spice, cayenne
2 tsp olive oil
1 egg
1 c beer or water
24 thick cut pickle slices (i use my bread and butter canned pickles, but mt. olive bread and butter are a nice substitute)
oil for deep frying, i use peanut oil
ranch dressing for serving

Steps:

  • 1. Blend dry items together. Add egg, oil, beer or water (beer just makes this batter). Beat until lumps are gone.
  • 2. Heat oil to 350 degrees. Thoroughly dry the pickle slices. Drop thick pickle slices into your batter. Stir to coat.
  • 3. Using tongs drop coated pickles into oil. Fry until golden brown. Drain on plate with paper towel. Sprinkle with salt. Enjoy with ranch dressing.

Tips:

  • Choose the right pickles. Cornichons, dill pickles, and gherkins are all good choices for deep-frying. Look for pickles that are firm and crisp, and avoid any that are soft or mushy.
  • Use a light batter. A light batter will help the pickles stay crispy. A good option is to use a mixture of flour, cornstarch, baking powder, salt, and pepper. You can also add herbs or spices to the batter for extra flavor.
  • Fry the pickles in hot oil. The oil should be at least 350 degrees Fahrenheit before you add the pickles. This will help the pickles cook evenly and prevent them from becoming soggy.
  • Don't overcrowd the pan. When you're frying the pickles, don't overcrowd the pan. This will cause the oil temperature to drop, and the pickles will not cook evenly.
  • Drain the pickles on paper towels. After you're done frying the pickles, drain them on paper towels to remove any excess oil.

Conclusion:

Deep-fried pickles are a delicious and easy-to-make appetizer or snack. They're perfect for parties, potlucks, or game day gatherings. With a few simple tips, you can make sure your deep-fried pickles are crispy, flavorful, and addictive.
