- Coat the chicken in flour. Heat large fry pan or skillet ; add the oil, and seal chicken until turning a golden brown. Place in casserole dish or your slow cooker.
- Add all the vegetables and the bacon/ham to the fry pan and cook for 2 minutes then stock cubes , cayenne pepper simmer for another couple of minutes.
- Add to the chicken, making sure that there is enough liquid to not quite cover the meat. Add a little extra water if necessary. Cook in a moderate oven 180°C for 1 hr 30 minutes, or until cooked.
- To microwave, bring to the boil on full, then set on 30% for 45 minutes to simmer.
- Serve with new potatoes or rice and fresh vegetables.

- Add butter to large skillet or pot and add diced onion. Cook until tender.
- Add chicken tenders and 1 cup chicken broth to same pot with cooked onion.
- Cook approximately 20 minutes on medium heat until chicken is done.
- Cut chicken into bite size pieces and put back in pot.
- Add 2 cans of cream of chicken soup, 1 cup of milk, sour cream, green chiles (drained), garlic powder and pepper; and 1 cup of cheese. Heat until everything is mixed and melted.
- In greased casserole dish, layer 6-8 corn tortillas (or flour, your preference).
- Then add half of the Sour Cream Soup/Chicken mixture.
- Sprinkle with a little cheese (1/2 cup)
- Add another layer of 6-8 tortillas, the rest of the sauce mixture and the rest of the cheese.
- Cover with foil and Cook in 350 degree oven for approximately 45 minutes.
- You can make this lower in fat by using the reduced fat soup and reduced fat or fat free sour cream, as well as reduced fat cheese.
- Before serving, you can add a few chives for garnish. Looks nice.

- 1. Preheat oven to 350 degrees. Place boneless, skinless chicken breasts in sauce pan with enough water to cover the chicken. Bring to a boil, then turn off the heat; place a lid on your pot and allow to sit for 10-15 minutes to finish cooking. Remove chicken from stock (reserve the stock) and allow to cool, then shred the chicken. When building the layered casserole, do not mix the layers.
- 2. Layer 1 - In 9x13 casserole dish, melt 1 stick of butter. Spread shredded chicken over butter. Sprinkle black pepper and dried sage over this layer. Note: If you want to serve this as a pot pie, add a layer of vegetables now. I used fresh corn from my freezer( thawed) and 1/2 cup diced sweet onion
- 3. Layer 2 - In small bowl, mix milk and Bisquick. Slowly pour over chicken.
- 4. Layer 3 - In medium bowl, whisk together 2 cups of the chicken stock (strained, if needed), chicken granules and soup. Once blended, slowly pour over the Bisquick layer.
- 5. I added some shredded parmesan cheese, and panko bread crumbs on top, for some crunch. Bake for 60 min,or till golden brown, remove from oven, and let stand for 5 min before cutting..ENJOY! This casserole is so tasty, and such a nice comfort food...
