THE ORIGINAL KIELBASA AND SAUERKRAUT

The Original Kielbasa and Sauerkraut image

This is a family recipe passed down from my grandfather and my father who still make every New Year's Day. It's the best. Trust me, you'll love this recipe. It's original and kinda simple. It's 'old school.' Serve with Jewish rye bread, butter, and horseradish. A good side is mashed potatoes with cheese, milk, and butter to create a rich, creamy, tasty mashed potatoes to go with the dish.

### **Essential Ingredients and Substitutions:** * Kielbasa: Polish sausage can be substituted, but kielbasa is the traditional choice. * Sauerkraut: To save time, use canned sauerkraut, but fresher sauerkraut has a better crunch and more vibrant taste. * Beer: For an alcohol-free alternative, try broth or water, but beer is the ideal choice. * Onions: Use yellow or white; red onions can be too strong. * Apples: Use firm, crisp apples such as Braeburn, Honeycrisp, or Granny Smith. * Brown sugar: Adds sweetness and balances the sauerkraut's acidity; molasses is a good alternative. * CarAWAY seeds: Use freshly ground for the best results. * Mustard seeds: Black or brown are both fine, but black mustard seeds have a milder, more mellow taste. * Bay leaves: Use whole bay leaves for the best result; ground bay leaves won't provide the same depth of favor. ### **Cooking Techniques:** * Before slicing, halve the kielbasa lengthwise, then cut into 1/4-inch thick slices. * Rinse the sauerkraut with water in a colander to remove any extra salt and acidity; squeeze out as much liquid as possible. * Use a large, heavy-bottomed pot or braising pan for cooking. * Sauté the onions in butter over medium-low heat until translucent, about 5 minutes. * Add the kielbasa slices to the pot with the onions and raise the heat to medium-high. Cook until the kielbasa is browned on all sides, about 8-10 minutes. * Add the sauerkraut, beer, apples, brown sugar, carAWAY seeds, mustard seeds, bay leaves, and water. Bring to a boil, then reduce heat to low and simmer for 30 minutes. * Season with salt and apple cider vinegar to taste. * Serve hot with mashed or roasted sweet or white carAWAY. ### **Conclusion:** Kielbasa and sauerkraut is a classic German dish enjoyed year-round in many parts of the world. It's a versatile dish that can be tailored to your liking by adjusting the ingredients and cooking techniques. Follow these tips and tricks to create a delicious and satisfying meal that will quickly become a family favorite.
