DELICIOUS AND SPICY 'WHO NEEDS MEAT' VEGETARIAN TACO CASSEROLE
One day, I was craving for mexican food but I had a vegetarian friend over for dinner, so I decided to experiment with a vegetarian take on my favorite taco casserole dish, which turned out, to my surprise, even better than the original! Instead of using tortilla chips, you can also just scoop some of the casserole in a soft taco, this is actually really good as well, especially when served with some guacemole!

Steps:
- 1. Gather your ingredients:
- 2. In a medium skillet, brown the meat and stir till crumbly. Drain the fat. Add the taco spices, blend well.
- 3. In a small bowl, combine the broth and flour. Add to the meat mixture; bring to a boil to slightly thicken liquid. Stir in sour cream and chiles; blend well.
- 4. In 13 x 9 x 2 inch lightly greased baking dish, place half of the chips. Top with 1/2 of the beef mixture, 1/2 of the cheese, and half of the green onions. Layer again, ending with the green onions.
- 5. Bake uncovered, in a 375 degree oven for 25-30 minutes. Let stand 5 minutes before cutting.
- 6. When I make a double batch of this, it works nicely in an aluminum, throw away roaster. If you make this for a party, I would suggest you double the batch; you won't have any left..Seriously! And naturally you would bake it longer. I baked mine until the cheese is golden brown.. Serve with a dollop of sour cream and salsa.
- 7. I wanted to update this with the chicken version I made tonight.Instead of ground beef, I coarsely ground 1 pound of chicken breasts in my food processor. I also was out of green onions, so I chopped about 1/2 cup of onions and browned in with the chicken...I topped it with red jalapeno slices..So the illustrated pics that you see are for the chicken version...
Tips:
- Choose the right tortillas: Corn tortillas are the traditional choice for taco casserole, but you can also use flour tortillas. If you're using corn tortillas, be sure to soften them in warm water before assembling the casserole.
- Use a variety of fillings: The possibilities are endless when it comes to fillings for taco casserole. Some popular options include ground beef, chicken, turkey, beans, and vegetables.
- Don't skimp on the cheese: Cheese is what makes taco casserole so delicious. Use a Mexican cheese blend or your favorite type of shredded cheese.
- Add some spice: Taco casserole is typically a mild dish, but you can add some spice by using a spicy salsa or taco seasoning. You can also add chopped jalapeños or cayenne pepper to taste.
- Bake until bubbly: Taco casserole should be baked until it's bubbly and the cheese is melted and golden brown. This usually takes about 30 minutes.
