Devonshire cream, also known as clotted cream, is a thick, rich cream that is a specialty of the English county of Devon. It is made from unpasteurized cow's milk that is heated slowly and then cooled, allowing the cream to rise and form a thick layer on the top. The cream is then skimmed off and churned, resulting in a thick, spreadable cream with a slightly tangy flavor. Devonshire cream is a versatile ingredient, commonly enjoyed on scones, fruit, and desserts.

Number Of Ingredients 6

5 ounces devonshire cream
2 tablespoons fresh basil leaves, finely chopped
1 tablespoon lemon zest
8 slices white bread, very thinly sliced
1 large cucumber, seeded and thinly sliced into 24 pieces
3 large strawberries, very thinly sliced

COOK'S NOTES: You can make your own Devonshire cream with cream cheese, sugar, and heavy cream. Just beat 4 oz of cream cheese with 1 tablespoon of sugar. Slowly add a 1/2 cup of heavy cream and mix until stiff peaks form.

Tips:

  • Use the freshest ingredients possible. This will ensure that your Devonshire cream is of the highest quality and has the best flavor.
  • Make sure the cream is cold before you start whipping it. This will help it whip up faster and more easily.
  • Whip the cream in a chilled bowl. This will also help it whip up faster and more easily.
  • Whip the cream until it reaches stiff peaks. This means that the cream should hold its shape when you lift the whisk out of the bowl.
  • Flavor the cream to your liking. You can add sugar, vanilla extract, or lemon zest to the cream for extra flavor.
  • Chill the cream for at least 30 minutes before serving. This will help it set and make it easier to spread.

It can also be used as a filling for cakes and pies. No matter how you choose to use it, Devonshire cream is sure to add a touch of luxury to your meal.
