Steps:
- 1. Boil the eggs in a saucepan with enough water to cover the eggs. Boil for 15 minutes; drain and let the eggs cool in cold water. ( I usually put them in the freezer for 15 minutes ) Remove and discard the egg shells.
- 2. Slice eggs lengthwise in half. Remove egg yolk reserving 4 yolks. Discard remaining yolks or use them for something else. Place egg whites cut sides up on a serving platter.
- 3. In a medium bowl combine cottage cheese, ranch dressing, mustard, relish and the 4 egg yolks. Smash and mix with a fork until smooth. Stir in chives. Spoon the mixture into each egg white. Cover and chill 1 hour.
- 4. Remove eggs before serving and sprinkle with Paprika.
Tips:
- For a classic deviled egg, mash hard-boiled eggs with mayonnaise, mustard, and a dash of paprika.
- Add-ins and variations are endless. Try chopped veggies, herbs, bacon, or cheese.
- For a smoky flavor, use smoked paprika or even a touch of liquid smoke.
- For a spicy kick, add a pinch of cayenne pepper or diced jalapeños.
- For a creamy and luxurious filling, use Greek yogurt or sour cream instead of mayonnaise.
- For a healthier option, use avocado instead of mayonnaise.
- Garnish your deviled eggs with fresh herbs, crumbled bacon, or a sprinkle of paprika.
- Serve deviled eggs as an appetizer, side dish, or even a main course.
