Time 2h

Yield 6 to 8 servings

Number Of Ingredients 14

4 ounces thick-cut bacon (about 3 slices), cut into 1/2-inch-thick pieces
1 medium yellow onion, finely chopped (about 1 1/2 cups)
3 cloves garlic, minced
1 pound prepared BBQ ribs, bones removed, meat finely chopped (about 2 cups)
1 cup prepared pulled pork in BBQ sauce
1 pound 80/20 ground beef
2 large eggs
1/2 cup plain breadcrumbs
2 teaspoons mustard powder
1 1/2 teaspoons smoked paprika
1 teaspoon dried basil
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper
1/2 cup prepared BBQ sauce, plus more for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
  • Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
  • Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
  • Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
  • Serve with additional warm BBQ sauce alongside.

UPSIDE-DOWN BARBEQUE MEATLOAF

Upside-Down Barbeque Meatloaf image

When I've made 'barbeque meatloaf' before I've simply used the standard spoon-the-glaze-on-top-of-the-loaf-and-bake-it method. This time I wanted to line the loaf pan with some of the sauce, press the meat in, and let it roast in the goodness. I was envisioning a beautiful, glossy finish when I turned it on to the serving platter. It wasn't quite as aesthetically pleasing as I hoped (ugly). But, hey--this is quick and dirty home cooking. It may not have looked good, but it tasted fine!

Yield 4

Number Of Ingredients 14

1 ¾ pounds very cold ground beef
1 ½ teaspoons salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
½ teaspoon celery salt
¼ teaspoon chipotle chile powder
1 pinch cayenne pepper
½ cup fine, dry breadcrumbs
1 egg, beaten
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
¼ cup barbeque sauce (such as SFQ®), or to taste

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix ground beef, salt, garlic powder, onion powder, black pepper, celery salt, chipotle chile powder, and cayenne pepper together in a bowl with your hands.
  • Stir breadcrumbs, egg, ketchup, mustard, and Worcestershire sauce into meat mixture until thoroughly combined; form into a loaf shape.
  • Spread barbeque sauce out into the bottom of a loaf pan; place meatloaf on top of barbeque sauce and press into pan.
  • Bake meatloaf in the preheated oven until no longer pink in the center, about 1 hour, 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain the fat from the loaf pan and invert pan over a plate to transfer meatloaf. Let rest for 5 minutes before slicing.

Tips:

  • Use high-quality ground beef. The better the beef, the better the meatloaf will be. Look for ground chuck or ground sirloin that is at least 80% lean.
  • Don't overmix the meat. Overmixing can make the meatloaf tough. Mix the ingredients just until they are combined.
  • Use a variety of seasonings. Seasonings like garlic, onion, paprika, and cumin add flavor to the meatloaf. You can also add fresh herbs like parsley or thyme.
  • Bake the meatloaf at a low temperature. This will help to prevent the meatloaf from drying out. Bake the meatloaf at 325 degrees Fahrenheit for about 1 hour, or until it reaches an internal temperature of 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. This will help the meatloaf to hold its shape and prevent it from crumbling. Let the meatloaf rest for about 10 minutes before slicing.

Conclusion:

Dinosaur BBQ Meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its smoky, tangy flavor and tender texture, this meatloaf is sure to be a hit with the whole family. So next time you're looking for a hearty and flavorful meal, give Dinosaur BBQ Meatloaf a try!
