Transfer crumb mixture to pan. Press evenly onto bottom of pan. Bake until crust is light golden, about 10 minutes. Cool completely on rack.
- For filling:
- Blend cream cheese and sugar in processor until smooth and creamy, about 1 minute, stopping occasionally to scrape down sides of bowl. Add eggs 1 at a time, processing 3 to 5 seconds to blend between additions. Add dulce de leche and vanilla; process until blended, about 10 seconds. Spread batter evenly over cooled crust. Bake until just set in center and edges are puffed and slightly cracked, about 38 minutes. Transfer to rack; cool completely.

Refrigerate until chilled, about 1 hour (glaze will not be firm). DO AHEAD: Can be made 2 days ahead. Cover; chill.

Tips:
- Use high-quality ingredients. This will make a big difference in the final product. Use real butter, cream cheese, and dulce de leche. Don't skimp on the quality of your ingredients.
- Make sure the cream cheese is at room temperature. This will help it mix smoothly with the other ingredients. If the cream cheese is too cold, it will be difficult to mix and may cause the cheesecake to curdle.
- Don't overbeat the cheesecake batter. Overbeating can make the cheesecake tough and dense. Mix the ingredients just until they are combined.
- Bake the cheesecake in a water bath. This will help to prevent the cheesecake from cracking. Place the cheesecake pan in a larger pan filled with hot water. The water should come about halfway up the sides of the cheesecake pan.
- Chill the cheesecake before serving. This will help the cheesecake to set and firm up. Chill the cheesecake for at least 4 hours, or overnight.
- Garnish the cheesecake with toffee shards. This will add a delicious crunch and sweetness to the cheesecake. To make toffee shards, simply melt some toffee chips in the microwave and then spread them out on a sheet of parchment paper. Let the toffee cool and harden, then break it into shards.
Conclusion:
This dulce de leche cheesecake is a delicious and decadent dessert that is perfect for any occasion. The creamy cheesecake filling is swirled with dulce de leche, and the toffee shards add a delicious crunch. This cheesecake is sure to be a hit with everyone who tries it.
