Vanilla cheesecake with a graham cracker crust. Best served after overnight refrigeration.

2 cups graham cracker crumbs
1 ½ tablespoons butter, softened
3 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
4 eggs
1 (8 ounce) container sour cream
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine 1 1/2 cups of graham cracker crumbs and the butter or margarine with your hands. Flatten out crust on the bottom of the springform pan.
  • In a large bowl, beat softened cream cheese until smooth. Beat in sweetened condensed milk and mix until combined well. Add the eggs, sour cream and vanilla, and continue to beat. Mix until very smooth, and pour mixture into the springform pan. Sprinkle the remaining 1/2 cup graham cracker crumbs over the top of the batter.

Number Of Ingredients 11

2 (8 ounce) packages Philadelphia Cream Cheese, softened
14 ounces dry curd cottage cheese (Astro or Crescent preferred)
4 large eggs
1 1/2 cups sugar
1 cup sour cream
1/3 cup flour
3/4 teaspoon vanilla extract
3/4 teaspoon lemon extract or 3/4 teaspoon lemon zest
2 tablespoons fine dry breadcrumbs
4 cups strawberries
1/3 cup strawberry jelly or 1/3 cup red currant jelly

Steps:

  • In a large mixing bowl, combine cream cheese and cottage cheese.
  • Using electric mixer, beat at low speed for 5 minutes or until smooth.

  • Beat in eggs, one at a time, until incorporated.
  • Add sugar, sour cream and flour.
  • Continue to beat for 3 minutes at low speed.

  • Remove cake from oven and let stand for 10 minutes.
  • If there is a ridge around edge of cake, using your fingertips, gently press down to even the top.
  • Return the cake to the oven and bake for 1 1/4 to 1 1/2 hours more or until the cake is set in the center.
  • Touch center gently with the tips of fingers, it should feel dry to the touch.
  • WARNING: Do not overbake.
  • Remove the cheesecake from the oven and place on rack to cool.
  • Refrigerate for at least 1 day before serving.

  • Wash berries well and let dry on clean dry towel.
  • Remove stem ends. Arrange an even layer of whole berries on top of cake.
  • Place jelly in glass bowl with 1 teaspoon of water.
  • Microwave on high for 1 minute or until melted and boiling.

2 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup butter (soft or substitute margarine also soft)
40 ounces cream cheese
1 3/4 cups sugar
3 tablespoons flour
1 tablespoon lemon peel (grated)
1/4 teaspoon vanilla
5 eggs
2 egg yolks
1/4 cup heavy cream
1/2 cup sour cream

Steps:

  • Crust: In a medium bowl with hands or the back of a spoon mix graham cracker crumbs with 1/4 cup sugar and 1/2 cup soft butter until they are well combined. Press mixture on bottom and sides of 9 inch spring form pan building up sides of pan to form a rim all around. Refrigerate until needed. Preheat oven to 500 degrees.
  • Filling: In a large bowl of a electric mixer, combine cream cheese, sugar flour, lemon peel and vanilla. Beat on high speed just until blended. Beat in eggs and egg yolks one at a time. Add cream, beating until just blended. Pour into crust lined spring form pan. Bake at 500 degrees for 10 minutes then turn temperature down to 250 degrees and bake for 1 hour. After the cheesecake comes out of the oven spread sour cream on top of cheesecake. Let cool in spring form pan on wire rack until cool to touch then refrigerate overnight for best results. To serve remove loosen crust from sides of pan and remove side of spring form pan and slip a long enough knife underneath the crust of the bottom of cheesecake the bottom should be very hard and the cheesecake will slide very easily to a platter for serving.
