2 eggs

2 pounds ground beef (85/15)
1/2 cup minced onion
2 eggs
1/2 cup ketchup
1 tablespoon Worcestershire
1 cup crushed crackers (quick cook oats or breadcrumbs)
2 teaspoons Porterhouse seasoning
1/2 teaspoon kosher salt
1/4 teaspoon fresh cracked black pepper
1/2 cup ketchup
2 tablespoons brown sugar
2 teaspoons yellow mustard

Steps:

  • Preheat oven to 350 degrees F. Spray a 9"x5" loaf pan with nonstick cooking spray.
  • Combine meatloaf ingredients in a large bowl using your hands, just until combined. Do not overmix - The less you mess with it, the better it will be!
  • Shape into a loaf and place into a loaf pan.
  • In a small bowl combine 1/2 cup ketchup, brown sugar and mustard. Brush about 1/3 of the mixture over the top of the meatloaf.
  • Bake in the preheated oven for 45 minutes, then pour remaining sauce over the meatloaf. Return to the oven and bake for an additional 15-25 minutes or until meatloaf is completely cooked through. Meat should register between 155 and 160 degrees F.
  • Let stand for 5-10 minutes before slicing and serving. Garnish with parsley if desired.

I usually add another can of soup for the gravy so that we have plenty to pour over mashed potatoes too. Most times I also add some sauteed mushrooms to the gravy.

2 lbs ground beef
1/2 cup breadcrumbs or 1/2 cup oats
1 egg, beaten

½ teaspoon black pepper
2 pounds ground beef (85% is best)
½ cup ketchup
1 tablespoon brown sugar
1 tablespoon apple cider vinegar

Steps:

  • Preheat oven to 350° F. Lightly grease a 9x5-inch loaf pan with cooking spray.
  • In a large bowl, combine the eggs, Panko breadcrumbs, onion, garlic, ketchup, Worcestershire sauce, dried thyme, garlic powder, salt and pepper. Stir with a fork until well combined.
  • Add the ground beef to the bowl and use your hands to mix everything together until well combined. Try not to over-mix.

I played with this for awhile. My family LOVES this finally a meatloaf with good texture. This has become a request of not only family but friends. Even my father who does not like meatloaf. Will warn you I cook like Rachel Ray I don't really measure anything. But tried to the last time I made this. Hope you enjoy as much as my family. I didn't put serving size because I don't know my husband and father eat it all I only get one piece. :) And cook time depends on oven and how well you like it done, we like well. So cooking time is estimates as is servings.

3 lbs hamburger
16 ounces roll of pork sausage (I use Bob Evens)
16 ounces roll lean ground turkey
1/2 cup rolled oatmeal (approx.)
1 fresh garlic clove, minced
1/4-1/2 finely chopped fresh white onion
1/2 finely finely chopped med fresh bell pepper
10 dashes worchestershire sauce (approx.)
1 egg
fresh ground salt
fresh ground black pepper to pepper
crushed red pepper flakes, small palm full (optional)
1/2 cup brown sugar (not packed)
1/2 cup ketchup (Heinz)
5 dashes worchestershire sauce (approx.)

Steps:

  • In a large bowl mix all except the sauce ingredient. In a measureing cup mix the 3 sauce ingredient. Place in a 350 degree oven. I use a slotted roasting pan so as to drain the meat. And that way the meat doesn't stew in its fat (hate that).
  • About 30 min into baking start basting it with the sauce. Continue ever 10-15 min until finished cooking.
  • Carefully remove pan (remember there will be grease under it) Let rest 10 min and slice and serve.
  • I like to serve with garlic roasted mash potatoes and a veg.

1 cup fine fresh breadcrumbs (from 6 slices firm white bread; see Cooks' Note below)
1/3 cup whole milk
1 medium onion, coarsely chopped
1 celery stalk, coarsely chopped
4 garlic cloves
2 tablespoons neutral vegetable oil, such as grapeseed
2 1/4 teaspoons kosher salt, divided
1 1/2 teaspoons freshly ground black pepper, divided
3 tablespoons Worcestershire sauce
1 1/2 pounds ground beef chuck, preferably 20% fat
1/2 pound ground pork
2 large eggs
1/2 cup ketchup, divided, plus more for serving

Steps:

  • Position rack in center of oven; preheat to 350°F. Line a rimmed baking sheet or 13x9" shallow baking dish with foil. Soak breadcrumbs in milk in a large bowl until ready to use.

Bake meatloaf until an instant-read thermometer inserted into the center registers 155°F, 60-75 minutes. Let rest 15 minutes before slicing. Serve with more ketchup alongside.
