But it's this similarity that makes Doritos a reasonable ingredient for a corn tortilla-style casserole.Our Doritos Casserole takes the familiar base of cooked onion, garlic, and ground beef and seasons it with a packet of taco seasoning. We mix in a can of diced fire-roasted tomatoes for both acidity and smokiness. A can of chopped green chiles adds some flavor and spice, and a can of cream of chicken soup dissolves into the remaining ingredients to give a rich and savory quality to the mixture. 1 yellow onion, finely chopped
2 cloves garlic, thinly sliced
1 pound ground beef
1 package taco seasoning
1 (14.5-oz.) can diced fire-roasted tomatoes
1 (4.25-oz.) can chopped green chiles
1 (15-oz.) can cream of chicken soup
1 (9.75-oz.) bag Doritos Nacho Cheese Flavored Tortilla Chips
1 1/3 cups shredded cheddar cheese, divided
Fresh cilantro to garnish, optional

Steps:

  • Heat vegetable oil in a large skillet over medium-high. Add onion and sauté until softened and translucent, about 6 minutes. Add garlic and cook for 1 minute. Add beef and break up with a spoon; cook until completely browned. Add taco seasoning and stir to incorporate. Mix in tomatoes, green chiles, and cream of chicken, and stir occasionally over medium-high until liquid thickens, about 5 minutes. Remove from heat.

Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the aluminum foil and bake until the cheese begins to brown, about 20 minutes.

14 ounce "party size" bag of Nacho Cheese Doritos
1½-2 pounds ground beef
1 10¾ ounce can of cheddar cheese soup
1 10¾ ounce can of cream of chicken soup
1 12 ounce can of evaporated milk
1 4 ounce small can of diced green chilies
2-3 cups shredded Mexican cheese
1 packet Taco seasoning (optional)
Sour cream
Diced green onion
Sliced cherry tomatoes
Sliced Avocado or guacamole
Salsa

Steps:

  • Pre-heat oven to 350°
  • In a large pan, brown the ground beef and then drain the fat. If you plan to season the meat with taco seasoning, now's the time to do it:)
  • Add the 2 soups, evaporated milk, and diced green chilies to the ground beef
  • Cook while stirring over medium heat until it is bubbly
  • Prepare a baking dish with non-stick spray
  • Add 1/2 the bag of chips to the bottom of the baking dish. Crumble them a little bit as pictured (not too much!)
  • Scoop 1/2 of the meat mixture over the chips
  • Add a layer of 1 cup of shredded cheese on top. Add additional cheese if needed or desired.

1 1/2 cups water
1 (10 ounce) can Rotel Tomatoes, chopped
1 (13 -16 ounce) bag plain Doritos
1 1/2 cups chopped onions
1 lb ground beef
1 cup grated cheddar cheese

  • Preheat oven to 350 degrees.
  • Bring to a boil the soup, water, and tomatoes.

2 cups shredded Monterey jack cheese, divided

1 lb lean ground beef
salt & pepper
1 (10 ounce) can enchilada sauce
1 (10 1/2 ounce) can condensed cheddar cheese soup
1/2 cup light sour cream
0.5 (1 ounce) package taco seasoning
1 cup sharp cheddar cheese
0.5 (12 ounce) bag Doritos (any flavored)

Steps:

  • Preheat the oven to 350°F Spray a 9x13 baking dish with cooking spray.
  • Brown the hamburger until no longer pink, drain excess grease then sprinkle with salt & pepper. Remove from the heat & stir in the rest of the ingredients except the Doritos.
