Time 1h45m

Yield 1 cake, 16 serving(s)

Number Of Ingredients 14

1 cup butter, softened
3/4 cup creamy peanut butter
3 cups sugar
2 teaspoons vanilla
5 eggs
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup peanut butter
1/2 cup corn syrup
2 cups powdered sugar
1 tablespoon milk
1 teaspoon vanilla

Steps:

  • Heat oven to 350. Grease and flour 10 inch tube pan.
  • In large mixing bowl, combine butter, peanut butter, sugar, and vanilla; beat until light and fluffy. Add eggs, one at a time, beating well after each addition.
  • In another bowl, combine flour, baking powder, and salt; stir into butter mixture alternately with milk. Pour into pan.
  • Bake at 350 F until toothpick inserted in center comes out clean, about 1 hour and 15-30 minutes.
  • Cool in pan 15 minutes on wire rack. Remove from pan. Cool completely on wire rack. Drizzle cake with Peanut Butter Frosting.
  • Frosting (Sometimes I make only half of this as it makes a LOT):.
  • In sauce pan over low heat, melt 1/2 cup each of peanut butter and corn syrup. Stir in 2 cups powdered sugar, 1 T. milk, and 1 t. vanilla; mix until smooth.

Tips:

  • Mise en place: Before you start baking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid any mishaps.
  • Use room temperature ingredients: This will help your cake batter mix more evenly and produce a more consistent texture. If you forget to take your eggs and butter out of the fridge ahead of time, you can warm them up quickly by placing them in a bowl of warm water for a few minutes.
  • Don't overmix the batter: Overmixing can develop the gluten in the flour, which will make your cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help ensure that the cake bakes evenly. If you put the cake in a cold oven, it may not cook properly in the center.
  • Let the cake cool completely before frosting: This will help prevent the frosting from melting and sliding off the cake.
  • Use a toothpick to test the cake for doneness: Insert a toothpick into the center of the cake. If it comes out clean, the cake is done. If it comes out with batter or crumbs attached, the cake needs to bake longer.

Conclusion:

The double peanut butter cake is a delicious and easy-to-make dessert that is perfect for any occasion. With its moist and fluffy texture and rich peanut butter flavor, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this double peanut butter cake a try. You won't be disappointed!
