3/4 cup whole milk
1/4 cup (1/2 stick) unsalted butter
5 1/2 teaspoon dry yeast
3 large egg yolks
3 tablespoons sugar
1 tablespoon dark rum
1 teaspoon grated lemon peel
1/2 teaspoon salt
2 cups all purpose flour
Vegetable oil (for deep-frying)
Powdered sugar
Lingonberry preserves or strawberry preserves

Steps:

  • Heat milk and butter in heavy small saucepan over medium-high heat until butter melts, stirring occasionally. Transfer to large bowl. Cool to 110°F, about 15 minutes. Whisk in yeast; let stand until yeast dissolves, about 8 minutes.
  • Whisk yolks and next 4 ingredients into milk mixture. Stir in flour. Knead dough on floured surface 2 minutes.
  • Lightly oil bowl. Add dough, turning to coat. Cover with plastic wrap, then towel. Let dough rise in warm draft-free area until doubled, about 1 hour.
  • Punch down dough. Cover with plastic and towel; let rise 15 minutes.
  • Divide dough in half. Divide each half into 10 equal pieces. Roll each piece between palm of hand and work surface to form smooth round ball. Place on baking sheet, spacing evenly. Cover with plastic wrap,then towel. Let rise in warm area until almost doubled, about 15 minutes.
  • Pour enough oil into medium pan to reach depth of 3 inches. Heat to 325°F. Working in batches, fry doughnuts until brown, about 4 minutes per side. Using slotted spoon, transfer to paper towels and drain. Sift powdered sugar over doughnuts. Serve with preserves.

Homemade Doughnuts with Cinnamon Sugar and Cranberry Jam image

1 tablespoon plus 2 1/2 teaspoons active dry yeast
1 cup warm water
1 cup all-purpose flour, plus more for rolling dough and baking sheet
1 1/4 sticks unsalted butter, room temperature
2/3 cup granulated sugar
3 eggs, lightly beaten
1 teaspoon vanilla extract
1 teaspoon kosher salt
3 1/2 cups bread flour
1/2 gallon frying oil, plus a little for oiling bowl
1 cup granulated sugar
1 teaspoon ground cinnamon
Cranberry Jam, recipe follows
1 pound fresh cranberries, washed and dried
2 cups granulated sugar
1/3 cup water
1/2 cup orange juice, plus 1 orange, zested and juiced
1 cinnamon stick
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg

Steps:

  • In a medium bowl, stir together the yeast and the water. Set aside to "proof".
  • After 10 minutes, stir in the 1 cup of all-purpose flour, cover with plastic wrap and set aside in a warm place.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream together the butter and sugar for 8 to 10 minutes. With the mixer on low speed, add the eggs, 1 at a time. When the mixture is smooth, stir in the vanilla and salt. Add the bread flour and mix on low speed until fully incorporated.
  • Stir in the yeast mixture until thoroughly incorporated. Put the dough into an oiled bowl and allow to proof for 1 to 1 1/2 hours. In a medium bowl, mix together the granulated sugar and the ground cinnamon. Set aside.
  • Lightly flour a cool work surface and roll the dough out to about 1 1/2-inch thickness. Cut the dough with a round 3-inch cutter and turn them onto a floured baking sheet to rest, about 20 to 30 minutes, before frying.
  • Heat the oil in a large heavy-bottomed pot to 365 to 370 degrees F. Drop the dough rounds, in batches, into the hot oil and cook until golden brown on 1 side. Using a slotted spoon, turn the dough rounds on the second side and cook until golden brown. Remove them from the oil to paper towels to remove any excess oil. Roll the doughnuts in the cinnamon sugar and arrange on a serving platter. Serve immediately with the Cranberry Jam for dipping.
  • In a medium pot, add the cranberries, sugar, water and the 1/2 cup of orange juice. Stir to blend and bring the mixture to a boil over medium heat. Reduce the heat and add the cinnamon stick, allspice and nutmeg. Stir to blend and simmer for an additional 5 to 7 minutes. Some of the cranberries will burst and some will remain whole. Stir in the orange zest and orange juice and transfer to a serving bowl. Serve warm with the doughnuts.

6 fresh or 2 dry bay leaves
8 to 10 cloves
8 to 10 allspice berries or juniper berries
2 to 4 sprigs of thyme
2 shallots, minced
2 tablespoons canola oil
2 green apples, peeled and diced
4 tablespoons sherry vinegar
2 cups lingonberry preserves

Steps:

  • Tie up the bay leaves, cloves, allspice or juniper and thyme in a piece of cheesecloth.
  • Pour the canola oil into a pan over medium heat and cook shallots, stirring occasionally, until translucent, about 5 minutes.
  • Add the apples, and sauté briefly, then pour in the vinegar and stir to dissolve any brown bits in the pan.
  • Add the lingonberry preserves and the spice sachet. Cook gently on a low simmer for 10 minutes. Cool, and remove the sachet before serving.

2 ¼ pounds fresh lingonberries
⅞ cup water
1 cup white sugar

Steps:

  • Place lingonberries in a large pot with the water and bring to a boil. Boil for 5 to 10 minutes, and skim off any foam from the surface. Stir in sugar, bring to a rapid boil, and continue boiling for a few more minutes.
  • Ladle jam into sterile jars, leaving 1/4 inch of headspace. Cover with lids, and screw on rings. Process in a hot water bath for 10 minutes to seal. Refrigerate jam once the jar has been opened.

4 cups loganberries
½ teaspoon butter
6 ½ cups white sugar
1 (2 ounce) package powdered fruit pectin

Steps:

  • Inspect seven 8-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Crush berries in a bowl. Place 1/2 of the crushed berries into a sieve or cheesecloth to remove some seeds if desired. Transfer all berries to a large pot.
  • Stir in sugar and add butter to reduce foaming if desired. Bring mixture to a full rolling boil on high heat, stirring constantly. Stir in pectin quickly. Return to a full boil and boil for exactly 1 minute, stirring constantly. Remove from the heat and skim off any foam with metal spoon.
  • Ladle jam into hot, sterilized jars, filling to within 1/8 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any residue. Top with lids and screw rings on tightly.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and use a holder to lower jars 2 inches apart into the boiling water. Pour in more boiling water to cover jars by 1 to 2 inches. Bring to a rolling boil, cover, and process for 5 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark place for up to 1 year.

3/4 cup chopped pecans
1 egg
1 cup softened butter
10 ounces lingonberry preserves (filling)

Steps:

  • Preheat oven to 350 degrees. Spray a 9x9 baking pan or line with parchment.
  • Combine all ingredients together, except for lingonberry preserves. Mix on low speed until crumbly. Set aside one cup of crumb mixture.
  • Press remaining crumb mixture onto bottom of prepared pan. Spread the preserves evenly. Crumble rest of mixture over the preserves.
