I think I adapted this recipe from something printed on a can of yams about 20 years ago. I have always enjoyed this during the fall and winter seasons, and I think you will too. It is a nice change of pace from the usual spice cake.

2 cups sugar
1 cup butter, softened
1 1/2 teaspoons vanilla
5 eggs
1 (16 ounce) can cut yams, drained
3 cups all-purpose flour (make sure they are lightly spooned into measuring cup and leveled off)
2 teaspoons cinnamon
2 teaspoons baking soda
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon nutmeg
1 cup chopped pecans
1 cup raisins
1 (8 1/4 ounce) can crushed pineapple, drained well
1 (15 3/4 ounce) can ready-to-spread coconut pecan frosting

Steps:

  • Preheat oven to 325 degrees. Grease and flour a 10-inch tube pan.
  • In large bowl, cream sugar, butter and vanilla until light and fluffy. Add eggs, one at a time, beating well after each addition.
  • Cut up yams; add to creamed mixture, beating well until combined thoroughly.
  • Add flour, cinnamon, soda, baking powder, salt and nutmeg and mix well.
  • By hand, fold in pecans, raisins and drained pineapple. Spoon batter into prepared pan, spreading evenly. Bake for 60-70 minutes, or until tothpick inserted in center comes out clean.
  • Cool upright in pan for about 10 minutes, then invert onto serving plate and cool completely.
  • Meanwhile, in medium saucepan, heat frosting over medium heat just until meted, stirring occasionally. Spoon over cooled cake, allowing some to run down sides.

2 ½ pounds yams, peeled and cubed
1 cup pineapple and orange juice blend
2 tablespoons softened butter
½ cup (packed) dark brown sugar
½ cup chopped macadamia nuts

Steps:

  • Place yams into a large pot and cover with salted water. Bring to a boil, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Return yams to the cooking pot, and mash with juice until smooth. Pack mashed yams into a 3 quart casserole dish, dot with butter, then sprinkle with brown sugar and nuts. Loosely cover with aluminum foil.
  • Bake in preheated oven until hot and bubbly, 35 to 40 minutes.

1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant vanilla pudding mix
1 cup strong brewed tea, cooled, divided
4 large eggs, room temperature
3/4 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1 cup chopped pecans, toasted
2 cups confectioners' sugar
1/3 cup unsalted butter, melted

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. In a large bowl, combine cake mix, pudding mix, 3/4 cup tea, eggs, oil, vanilla and lemon extract; beat on low speed 30 seconds. Beat on medium 2 minutes. Stir in pecans. Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes., Cool in pan 10 minutes before removing to a wire rack to cool completely. In a small bowl, mix confectioners' sugar, butter and enough remaining tea to reach desired consistency. Pour glaze over top of cake, allowing some to flow over sides.

1 lb yam
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon allspice
1/8 teaspoon ground cloves
1/3 cup granulated sugar
1/3 cup light brown sugar, firmly packed
1/3 cup vegetable oil
3 egg whites
1 large carrot, shredded
2/3 cup low-fat buttermilk
1/2 cup carrot juice
1 cup powdered sugar
2 tablespoons orange juice
2 teaspoons orange zest, grated

Steps:

  • FOR THE CAKE ~ Preheat oven to 450 degrees F.
  • Prick yams with a fork in several places, then place on baking sheet & bake until tender, about 45 minutes, then remove from oven to cool.
  • When cool enough to handle, peel yams & mash.
  • Reduce oven temperature to 350 degrees F, then, with cooking spray, generously coat inside of a 9"x13" baking dish & set aside.
  • In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, cinnamon, salt, nutmeg, allspice & cloves, then set aside.
  • In another large mixing bowl, with an electric mixer, beat together mashed yams, granulated sugar, brown sugar & vegetable oil until light & fluffy.
  • Beat in egg whites until well combined, then fold in the shredded carrot.
  • In a small bowl, stir together buttermilk & carrot juice, then alternately fold this mixture AND the flour mixture into yam mixture, beginning & ending with flour mixture.
  • Spoon batter into prepared pan, smoothing the top, then bake 35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool in pan on a wire rack.
  • FOR THE GLAZE ~ In a medium bowl, stir together powdered sugar, orange juice & orange zest, then drizzle over cooled cake.
