2 whole garlic heads
1 lb sweet sausage
1/4 teaspoon dried sage
1/4 teaspoon dried rosemary
2 tablespoons butter
1/3 cup flour
4 cups milk
1 cup parmesan cheese
2/3 cup swiss cheese
1/2 teaspoon salt
1/8 teaspoon pepper
16 ounces cooked penne pasta

Steps:

  • Roast garlic heads in 350 degree oven, wrapped in foil, for one hour.
  • Separate cloves and squeeze to extract garlic pulp.
  • Discard skins.
  • Cook sausage in large nonstick skillet over medium heat until browned, stirring to crumble.
  • Rinse in colander to remove excess fat.
  • Place in large bowl and stir in sage and rosemary.
  • Melt butter in saucepan.
  • Add flour, stirring with a whisk.
  • Gradually add the milk; cook until slightly thick, stirring constantly with the whisk (about 10 minutes.) Stir in roasted garlic, cheeses, salt and pepper until just melted.

2 ou unsweetened chocolate,
(finely chopped)
1 stick unsalted butter,
(room temperature)
1 cup sugar
1 large egg
1/3 cup buttermilk
1 tsp vanilla extract
1 3/4 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 12-ou package semisweet
chocolate chips (about 2
cups)
Raspberry jam

Steps:

  • Melt chocolate in top of double boiler over barely simmering water, stirring until smooth. Cool slightly. Cream butter and sugar in medium bowl. Add egg and beat util light and fluffy. Stir in chocolate, buttermilk and vanilla. Sift flour, soda and salt into chocolate mixture and stir to blend. Mix in chocolate chips. Refrigerate until batter is stiff, about 1 hour. Preheat oven to 400 degrees F. Drop batter by generous teaspoons onto ungreased cookie sheets spacing 2 inches apart. Bake until cookies are firm around edges, about 10 minutes. While still warm, make indentation in center of each cookie with fingertips. Fill with jam. Transfer to rack and cool. (Can be prepared 1 day ahead. Store airtight.)

6 hazelnut truffles
5 ounces white candy coating, chopped
1 green or red Fruit Roll-Up
6 Oreo cookies
1 can (6.4 ounces) black decorating icing
6 slivered almonds, cut in half

Steps:

  • Place truffles on a waxed paper-lined pan. Freeze for 10 minutes or until chilled. Meanwhile, in a microwave, melt candy coating; stir until smooth. Dip truffles in coating to cover completely; allow excess to drip of. Return to prepared pan. Refrigerate until hardened. , Cut Fruit Roll-Up into 2-1/2-in. x 1-1/2-in. strips. Reheat candy coating if necessary. Dip truffles in candy coating again; allow excess to drip off. Place one on each cookie. Wrap a fruit strip around base of truffle for cape.
