Yield Makes about 6 dozen

Number Of Ingredients 7

2 cups all-purpose flour
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1 1/4 cups sugar
1 teaspoon crushed ammonium carbonate (also called baker's ammonium)
1/2 teaspoon almond extract
1 1/2 cups sweetened flaked coconut

Steps:

  • Sift together flour and salt.
  • Beat together butter and sugar with an electric mixer until pale and fluffy. Beat in ammonium carbonate and almond extract until combined well. Mix in flour mixture at low speed just until blended, then stir in coconut. Form dough into a disk and chill, wrapped in plastic wrap, until firm, about 1 hour.
  • Preheat oven to 300°F.
  • Roll dough into 1-inch balls and arrange 1 inch apart on greased baking sheets.
  • Bake cookies in batches in upper third of oven until pale golden around edges, 18 to 22 minutes. Transfer cookies to a rack to cool.

Tips:

  • Make sure the butter is softened to room temperature before creaming it with the sugar. This will help to create a smooth and creamy dough.
  • Do not overmix the dough. Overmixing will make the cookies tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies until the edges are just starting to turn golden brown. Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely on a wire rack before storing them in an airtight container.

Conclusion:

Swedish dream cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their soft and chewy texture, delicate almond flavor, and sweet powdered sugar coating, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a special cookie to bake, give Swedish dream cookies a try. You won't be disappointed!
