EAST CROATIAN MEAT LOAF
This recipe is from village Nijemci in Slavonia (eastern Croatia). Nijemci literally means Germans; I have collected this recipe during annual minority fair in Zagreb where minorities present their culture. German minority was pretty large in eastern Croatia, but after 2WW Bolsheviks wiped them out (mostly kill them in concentration camps). Village Nijemci remind us of that minority (today we have about 2000-3000 Germans (volksdeutsch) living in Croatia) and they mostly live in east Croatia. The recipe is time consuming but very nice Sunday family gathering meal.

Steps:
- First hard boil two eggs, and when done remove from shells; put aside.
- Finely mince onion and garlic. Mix together both meats, onion, garlic, breadcrumbs, two fresh eggs, water, salt, pepper, paprika, mustard and parsley. Mix all ingredients with hand to make nice meat mixture.
- Put mixture onto aluminum foil and spread to about 20x20cm flat surface. Put two hard boiled eggs in the middle and roll it into a loaf. Let it stay in foil for some time to form a loaf.
- Cut some bacon into thin slices to cover first bottom of casserole pot (you will put meat loaf on this bacon) and some to cover the loaf. The rest of bacon cut into small cubes.
- Lay loaf on bacon slices (remove aluminum foil) making sure the loaf stays together. Cover loaf with bacon slices and put into 200°C oven for 50 minutes. Spread bacon cubes around meat loaf (it will be enough fat from this bacon, so you do not have to add oil).
- During baking, add some beef stock (pour over the roast). When the loaf is done remove it carefully from casserole and deglaze the pot with some beef stock, add some flour and sour cream, stir well. Pour the sauce over meat loaf and serve.

- Lightly steam onions, celery, and bell peppers and let cool. Place the cooled vegetables into a mixing bowl and add the pork, sirloin, ketchup, eggs, half and half and mix well. Mix in the oatmeal and spice mix. Place the meat into a loaf pan lined with bacon strips. Place in refrigerator overnight so that the meat loaf firms up. - In a large skillet heat the butter over medium-high heat until melted. Add all but 1/4 cup of the onions, the celery and all but 2 tablespoons of the bell pepper and cook, stirring occasionally, until vegetables are softened and beginning to caramelize around the edges, about 6 minutes. Add 2 teaspoons of the garlic, the thyme, rosemary, and parsley and cook for 2 minutes. Remove from the heat and allow to cool.
- Preheat the oven to 350 degrees F.
- When the vegetable mixture is cooled, transfer to a mixing bowl and add the eggs, mustard, 1/4 cup of the ketchup, 1 teaspoon of the Worcestershire sauce, and heavy cream and mix until thoroughly combined. Add the breadcrumbs, ground chuck, pork sausage, ground veal, 1 teaspoon of the salt and 1/4 teaspoon of the pepper and mix until just combined. Do not overmix. Transfer meat mixture to a 9 by 5 by 3-inch loaf pan and using your hands, form mixture into a loaf shape. Arrange the slices of bacon on the top of the meatloaf and set aside.
- In a small saucepan combine the remaining 1/4 cup of chopped onion, remaining 2 tablespoons of green pepper, remaining teaspoon of garlic, remaining 1/2 cup of ketchup, remaining 2 tablespoons of Worcestershire sauce, remaining 1/2 teaspoon of salt, remaining 2 teaspoons of pepper, vinegar, and canned tomatoes and bring to a boil over medium-high heat. Cook until thickened, about 5 minutes.
- Pour the sauce over the uncooked meatloaf and bake for 45 minutes to 1 hour, or until the bacon and sauce are slightly caramelized on the top of the meatloaf. Remove from the oven and cover loosely with aluminum foil. Let stand for 10 minutes before serving. Slice and serve along with the Macaroni with 4 Cheeses.

This is a typical Meatloaf found in eastern European kitchens and restaurants. My Dad who was a wonderful cook brought this with him when he came to America in the 20's. I've added the glaze when I started to prepare it myself. Also he used to use minced garlic, not the other type I now use. Remember to get lean ground pork. The pork I remembered seeing in the supermarkets had very visible pork fat. Try not to purchase that type. Buttered parslied potatoes and cucumber salad go especially well with this dish. You can use either a loaf pan or a 9x13. One tip said she used a loaf pan and was able to extract the grease before adding the glaze. Both pans are usable. See which one works best for you.

- Toast the bread slices very slightly Just enough to have them dry out a bit. Let cool. Crumble. Add the milk and allow the bread to soak up the milk. If too wet squeeze it out with hands.
- Heat the olive oil and saute the onion until soft and translucent and slightly golden color. Let cool a little.
- In a large bowl add the pork, egg, parsley, salt, pepper, bread that has been moistened with the milk, garlic granulated or powdered, and the cooled sauteed onions.
- Mix really well with hands.
- Shape into an oval approximately 3" high x 4" wide. Place into a 13"x9" baking dish.
- Bake in preheated 350°F oven for 45 minutes. At this point any grease may be removed before glazing.

- Preheat oven to 425 degrees.
