1 ½ cups Quaker® Oats (Quick or Old Fashioned, uncooked)
1 cup all-purpose flour
½ cup firmly packed brown sugar
½ teaspoon baking soda
10 tablespoons butter or margarine, melted
1 (21 ounce) can apple pie filling
¾ cup dried cranberries
1 ½ teaspoons lemon juice
½ teaspoon ground cinnamon

Steps:

  • Heat oven to 375 degrees F. Lightly spray 8- or 9-inch glass pie plate with nonstick cooking spray.
  • In medium bowl, combine oats, flour, brown sugar and baking soda. Add melted butter; mix well.
  • Set aside 3/4 cup oat mixture for topping.
  • Press remaining oat mixture firmly onto bottom and sides of pie plate.
  • Bake 10 to 12 minutes or until light golden brown. Cool slightly on wire rack.
  • Using same bowl, stir together pie filling, cranberries, lemon juice and cinnamon.
  • Spoon filling over hot crust, spreading evenly. Sprinkle reserved oat topping evenly over filling.
  • Bake 18 to 22 minutes or until topping is golden brown.
  • Serve warm or at room temperature.

4 gala apples, peeled and cored
6 tablespoons brown sugar
1/2 cup rice flour, mix (1 cup white rice flour to 1/2 cup tapioca starch)
1/2 cup blanched almond, finely chopped (I really like to add some chopped walnuts as well)
4 tablespoons butter
2 teaspoons cinnamon

Steps:

  • Preheat oven to 375°F.
  • Cut each apple into thin wedges.
  • Place the apples wedges in a deep baking dish. Make sure that the dish is not too big so you will have more than one layer of apple wedges in the bottom of the dish.
  • Sprinkle the apple wedges evenly with cinnamon and 2 tablespoons of brown sugar.
  • To prepare the crumble crust, combine nuts, flour mix and 4 tablespoons of sugar in a bowl. Add in the butter and knead with your hands until the dough resembles breadcrumbs. Spread the crumble mixture all over the apples.
  • Bake in the oven until the apples are tender and the topping mixture is golden (25 minutes).
  • Serve warm with vanilla ice cream on the side if desired.

I had a can of apple pie filling, that I wanted to use up, so this is what I threw together...took one of my other recipes and combined for this recipe...Love the topping... Enjoy!

1 can(s) apple pie filling, or your favorite
1/2 c butter, melted
1 1/2 c flour
1/2 tsp ground cinnamon - divided
1/4 c each - granulated sugar & packed brown sugar
1/4 c old fashioned oats
1/3 c chopped pecans
handful of raisins - optional

Steps:

  • 1. Preheat oven to 425 degree F. I used my iron skillet for this dessert. You can use a 9 inch pie plate or another oven safe skillet. Pour pie filling into pan and chop up apples some, to evenly distribute. I then added a handful of raisins. Sprinkle with 1/2 the cinnamon...If you want more filling than topping, add an extra can of pie filling.
  • 2. In a medium bowl add the flour, pecans, sugars, the other half of the cinnamon, and oats. Toss well.
  • 3. Pour in the melted butter and toss together until you have all dry ingredients moistened. I use my fingers.
  • 4. Spread crumb mixture evenly onto a baking sheet and bake for roughly 5 minutes or until begins to brown.
  • 5. Once cool, sprinkle evenly over pie filling. Place back into oven and bake for 15 - 20 minutes or until golden. My oven went on the blinks half way through baking and burnt my top some...luckily I caught it in time.
  • 6. Serve warm with a big scoop of ice cream...yummy!
