A very tasty and tummy warming recipe given to me several years ago. Once the ground beef is cooked, this can all get dumped into the crock pot. UPDATE 3/09 I added a 1/2 t of dried thyme to round out the flavor.

1 lb lean ground beef
1 onion, medium chopped
1 minced garlic clove
28 ounces diced tomatoes with juice
3 cups low sodium beef broth
8 ounces tomato sauce
14 ounces great northern beans, sub. kidney
1 small cabbage, chopped, sub. 16 oz. package of slaw mix
1/2-1 teaspoon dried thyme
1/2 teaspoon chili powder (to taste)
salt, to taste
pepper, to taste

Steps:

  • In a large pot: Brown ground beef, drain any fat.
  • Add onions and garlic, saute with ground beef until tender.
  • Note: At this point you place the ground beef mixture and remaining ingredients in the crock pot. Cook on low for 4-6 hours.
  • Standard stove top cooking: Add remaining ingredients and simmer.
  • Simmer for 1-2 hours on stove top until cabbage is tender. Stirring occasionally. Check fro additional seasonings.
  • Serve with a crusty bread.

1 can(s) (14.5 ounce) can diced tomatoes
1 lb cubed beef brisket
1 carrot, chopped
1 onion, chopped
2 stalks celery, chopped
7 c cold water
1/4 c apple cider vinegar
1/4 c sugar
2 clove minced garlic
1 medium head cabbage, chopped
additional seasonings as desired including salt, pepper, cayenne, and/or garlic

Steps:

  • 1. In a large stock pot combine tomatoes with liquid, beef brisket, carrot, onion and celery. Cover with cold water and season with vinegar and sugar to taste. Simmer over low heat for at least 2 hours, add cabbage and simmer 30-45 minutes longer, or until all ingredients are tender. Add additional seasoning to taste, including salt, pepper, cayenne, and/or garlic.

1 tablespoon vegetable oil
2 garlic cloves, minced
1 medium onion, finely chopped
2 cups beef broth
2 cups water
1 cup tomato soup
1 teaspoon Worcestershire sauce
1/3 cup ketchup
2 cups cabbage, roughly chopped
1 chili pepper
1/2 cup long grain rice
2 teaspoons salt
2 teaspoons pepper

Steps:

  • Lightly brown pork in large saucepan.
  • Remove pork from saucepan and drain excess fat.
  • Sauté onion and garlic in vegetable oil until softened, in same saucepan.
  • Put all ingredients (including pork) in saucepan.
  • Bring to a boil, covered.
  • Simmer for 90 minutes, covered.

This is a simple go to recipe that can take away the edge of hunger! You can add more vegetable, I choose the convenience of a frozen package of Jalapeno with Onion Mix!

1 c cabbage head
1 pkg jalapeno pepper mix with onions
2 c beef broth, reduced sodium
1 Tbsp safflower oil
1 can(s) crushed tomatoes with onion

Steps:

  • 1. Roughly Chop one cabbage head
  • 2. Saute One package of Jalapeno Pepper Mix in lightly coated pan with Safflower Oil (low heat)
  • 3. Add Cabbage to the pepper mixture, wilt slightly
  • 4. After all Vegetables are wilted then add the beef broth and allow to simmer for 30 minutes at a low heat!
  • 5. You may salt and pepper to desired taste, myself it does not need any salt or pepper. This is personal preference
  • 6. Great recipe for losing the unwanted weight after the Holidays.

  • If you don't have any vegetable broth on hand, you can use water instead. Just add a little extra salt and pepper to taste.
