Yield 8

Number Of Ingredients 14

½ cup butter
1 small carrot, finely diced
1 stalk celery, diced
1 small onion, finely diced
1 clove garlic, minced
½ cup all-purpose flour
1 ½ cups white corn kernels
1 ½ cups yellow corn kernels
4 russet potatoes, diced
2 cooked rotisserie chicken breast halves, shredded
4 cups chicken stock, divided
2 ½ cups half-and-half
1 pinch nutmeg
salt and ground black pepper to taste

Steps:

  • Melt butter in a large saucepan over medium heat; cook and stir carrot, celery, onion, and garlic into hot butter until slightly softened, about 2 minutes. Stir flour into mixture to make a paste; cook until lightly browned and flour gives off a slightly toasted smell, about 5 minutes. Watch carefully, flour burns easily. Remove saucepan from heat and set aside to cool, about 15 minutes.
  • Stir white and yellow corn, potatoes, chicken, and 3 cups of chicken stock in a large soup pot over medium heat. Whisk remaining 1 cup chicken stock into vegetables and flour mixture until thoroughly combined. Stir mixture into ingredients in soup pot. Bring to a simmer, stirring constantly, until thick, about 5 minutes.
  • Stir half-and-half, nutmeg, salt, and black pepper into chowder. Bring back to a boil, reduce heat to low, and simmer until potatoes are tender, about 20 minutes.

This is my mom's recipe.

Categories     Chicken Soups

Time 45m

Number Of Ingredients 7

1 medium cream of onion soup, chopped
2 small chicken breasts, cut into small pieces
1 box lipton's chicken noodle soup
2 can(s) chicken broth (or 1 carton)
2 can(s) cream style corn
2 can(s) milk (use corn can to measure), i sometimes use 1 can half and half
4 Tbsp butter

Steps:

  • 1. Sauté onions in butter until transparent, add chicken and cook untl done
  • 2. Add chicken broth and about 1/2?tsp. pepper, bring to boil
  • 3. Add chicken noodle soup
  • 4. Add corn
  • 5. Remove from heat, add milk, return to heat
  • 6. Add noodles, cook until noodles are done

Tips:

  • Choose the right chicken. You can use any type of chicken for this soup, but bone-in, skin-on chicken breasts or thighs will give the soup more flavor.
  • Don't overcrowd the pot. When you add the chicken and vegetables, make sure there is enough room for them to move around and cook evenly. If the pot is too crowded, the chicken and vegetables will steam instead of brown.
  • Use a variety of vegetables. This recipe calls for carrots, celery, and onion, but you can also add other vegetables such as potatoes, corn, or peas.
  • Season the soup well. This soup should have a slightly creamy and flavorful broth. Be sure to season it to taste with salt, pepper, and other herbs and spices.
  • Let the soup simmer. Simmering the soup allows the flavors to meld together and develop. Simmer the soup for at least 30 minutes, or longer if you have time.

Conclusion:

Chicken corn chowder is a classic comfort food that is easy to make and always a hit. This recipe is a great starting point, but feel free to experiment with different ingredients and seasonings to create your own unique version. Here are a few additional tips for making chicken corn chowder:
  • If you are using a slow cooker, you can cook the soup on low for 6-8 hours or on high for 3-4 hours.
  • You can also make this soup in the Instant Pot. Cook the chicken and vegetables on the "sauté" setting until browned. Then, add the remaining ingredients and cook on the "soup" setting for 15 minutes.
  • Serve the soup with a side of crusty bread or crackers.
