SLOW COOKER CHILI

Slow Cooker Chili image

One of my most popular recipes and for good reason! This is the best chili I've ever tasted! Slow cooking it allows for the flavors to meld and the most tender beef. Try it tonight and see why everyone loves this! Recipe makes about 12 cups.

Categories     Soup

Time 6h25m

Number Of Ingredients 17

1 Tbsp olive oil
2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*
3 (8 oz) cans tomato sauce
1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar
1/2 tsp ground coriander
Salt and freshly ground black pepper
1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)
Shredded cheddar cheese, (for serving)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

EASY & MILD CROCKPOT CHILI

Easy & Mild Crockpot Chili image

Kid-Friendly Chili Recipe...no hunks of tomatos, onions, or peppers. Just a smooth belly-warming bowl of Chili. If you are looking for an "authentic" chili recipe then this is probably no the one for you. However, if you are looking for an easy recipe (that you probably have the ingrediants on hand) you can throw in the crockpot and that your picky eater will actually eat..look no further. This is my fav chili recipe that I modified from an old Eastern Star recipe book called Homespun Cooking. Posting it here for safe keeping. Serve with Corn Chips or Corn Bread for a satisfying, belly-warming meal. :)

Time 6h15m

Yield 8-12 Cups, 8 serving(s)

Number Of Ingredients 9

1 lb ground beef
1 teaspoon onion powder
1 garlic clove, minced (or 1/4 tsp garlic powder)
1 1/2 teaspoons salt
2 tablespoons chili powder (to taste)
3 tablespoons tomato paste
2 tablespoons plain flour
3 cups water
1 (15 ounce) can kidney beans or 1 (15 ounce) can pinto beans

Steps:

  • Brown ground beef with onion powder & garlic.
  • Place browned meat & the remaining ingredients (except beans) into the crockpot.
  • Stir to ensure all ingredients are incorporated (mixed well).
  • Cook on Low 6-10 Hours.
  • Add Beans to the Chili 1/2-1 hour before the end of cooking (long enough to heat them through).
  • Special Note: I have added the complete 6oz can of tomato paste (so as not to waste it) with no issues. You may want to add a bit more water if you do use the whole can. Also, I have used just kidney beans or just pintos or both (for a realy hearty chili). This is one of those recipes you can play around with and have little ill-effects.
  • Also, I like to top ours with fresh grated cheddar cheese & a dollip of sour cream immediately before serving.

EASY CROCK POT CHILI

Easy Crock Pot Chili image

My latest chili recipe - I've found it tastes best if made the day before. Adjust the heat by using hot, medium or mild picante sauce and taco seasoning (I use hot for both). Red pepper flakes are optional, but I like it hot and use 2 teaspoons.

Time 3h15m

2 teaspoons minced garlic
1 (16 ounce) jar picante sauce (mild, medium or hot)
2 (14 1/2 ounce) cans diced tomatoes, undrained
1 (1 1/4 ounce) packet taco seasoning (mild, medium or hot)
2 (15 ounce) cans chili beans, in sauce
1 (15 1/2 ounce) can dark red kidney beans, undrained

1 teaspoon black pepper
1 teaspoon oregano
1/2-2 teaspoon red pepper flakes

Steps:

  • Mix all ingredients in Crock Pot.
  • Cover; cook on HIGH for 3 to 4 hours.
  • Note: To make on stovetop, mix all ingredients in a big soup pot; cover and simmer for about an hour or so.

Tips:

  • Prep your ingredients ahead of time: Chop your veggies, mince your garlic, and measure out your spices before you start cooking. This will make the process go much smoother.
  • Use high-quality ingredients: The better the ingredients you use, the better your chili will taste. Look for fresh, flavorful vegetables, a good quality ground beef or turkey, and a variety of spices.
  • Don't be afraid to experiment with different flavors: There are endless ways to customize your chili. Try adding different types of beans, corn, or peppers. You can also adjust the heat level by adding more or less cayenne pepper or chili powder.
  • Let your chili simmer for a long time: The longer you simmer your chili, the more flavorful it will be. Aim to simmer it for at least 2 hours, or even longer if you have time.
  • Serve your chili with your favorite toppings: There are many classic chili toppings to choose from, such as shredded cheese, sour cream, and diced onions. You can also get creative and add things like avocado, cornbread crumbs, or crumbled bacon.

Conclusion:

Crock-pot spicy chili is a delicious and easy-to-make meal that is perfect for a cold winter day. With a few simple ingredients and a little bit of time, you can create a flavorful and hearty chili that the whole family will enjoy.
