Steps:

  • Follow the recipe for the Sweet Pastry Crust making the shells in small, tartlet size tins.
  • I find it easiest to press another tartlet tin on top of the crust to hold its shape during freezing and baking. The crust dough would then be sandwiched between two tartlet tins. This replaces the need to line the tartlet shells with foil or parchment and then filling with pie weights.
  • Freeze the filled tartlet shells until firm.
  • Bake in a 375 degree oven until the edges turn golden brown.
  • Let cool for a few minutes then remove tartlet shells from tins and place on a rack to cool.
  • When tartlet shells are cool, heat apricot jam until it starts to bubble. Don't let it cook too long or it will become sticky and hard.
  • Using a pastry brush, brush a thin layer of the apricot jam on the insides of the tartlet shells. This prevents them from getting soggy after the filling is put in.
  • Spoon about a teaspoon of Lemon Curd into the jam-painted tartlet shells.
  • Pipe or spoon the Lemon Mascarpone Cream to fill the tartlets.
  • Top with berries.

3-4 pieces of filo pastry (I used Fillo Factory), at room temperature (*)
--- melted butter, for brushing
¼ cup sugar
8 oz. cream cheese, at room temperature
1 large egg yolk, at room temperature
1 tsp. vanilla extract
1 tsp. lemon zest
½ cup raspberries
½ cup strawberries, quartered
½ cup blueberries
For the lemon glaze (optional)
½ cup powdered sugar
1 TBSP. fresh lemon juice
½ tsp. lemon zest

Steps:

  • Preheat oven to 375˚F. Place a rack in the center of the oven. Lightly grease a muffin tin and set aside.
  • In a medium bowl, using a hand-held mixer on medium-high speed, cream together the sugar and the softened cream cheese. Add the egg yolk, vanilla extract and lemon zest and continue mixing until nice and smooth.
  • Unwrap the filo pastry. Lay one piece on a clean surface and brush it with the melted butter. (*) If you are using the thicker, country-style filo, repeat with two more layers of filo. If you are using the thinner-style filo, repeat with three more layers. Using a 5-inch cutter, make 9 circles. Gently press the circles into the prepared muffin tin.
  • Divide the cream cheese mixture evenly between the 9 filo cups. Bake for about 12 minutes or until the fillo is golden brown and the filling is set. Remove the muffin tin from the oven and let it cool for a few minutes (they will deflate slightly as they cool down).
  • Prepare the lemon glaze by mixing the ingredients in a small bowl. Set aside.
  • Top the cooled filo cups with the fresh berries, drizzle with some of the lemon glaze and serve with extra berries on the side.

1 package frozen phyllo dough
4 tbsp butter, melted
1 cup mascarpone cream
2/3 cup heavy whipping cream
6 tbsp sugar
zest of 1 medium lemon

Steps:

  • Defrost the frozen phyllo sheet by thawing in the refrigerator overnight or leaving it at room temperature for 2 hours.
  • Preheat oven to 400 degrees F.
  • Lay a large piece of parchment paper on a clean surface. Lay one sheet of phyllo dough on it and brush the top with butter.
  • Repeat this step until you have 4 layers of phyllo that has a buttered top.
  • Cut it into 8 squares. Fit into the muffin cups and gently push the bottom of the dough so it takes the shape of the muffin cup.
  • Bake for 8-10 minutes.
  • In a stand mixer, whip the mascarpone cream, heavy cream, sugar, lemon zest, and vanilla extract until it becomes stiff peak.
  • Assemble the tart, by filling the phyllo cups with the mascarpone cream and add the berries and mint on top.

2 sticks cold unsalted butter, cut into small pieces
1/2 cup sugar
2 cups all-purpose flour, plus more for surface

1 1/2 cups whole milk
1 cup heavy cream
6 large egg yolks
1/2 cup sugar
2 tablespoons cornstarch
2 tablespoons all-purpose flour

1/2 teaspoon pure vanilla extract
4 cups mixed fresh berries, such as blackberries, blueberries, currants, and strawberries
1/2 cup apricot jam, warmed and strained (optional)

Steps:

  • Make the crusts: Beat butter and sugar with a mixer on low speed until just combined. Add flour and 1/8 teaspoon salt; beat on low speed until dough comes together, 3 to 5 minutes. Press dough into a disk, and wrap in plastic. Refrigerate for 20 minutes.
  • Preheat oven to 325 degrees. Roll out dough to a scant 1/4-inch thickness on a lightly floured surface. Cut out thirty-two 3-inch rounds or twenty-five 3 1/2-inch rounds, and fit each into a 2 1/2- or 3-inch tart pan. Trim excess dough flush with edges of pans using a knife. Refrigerate until firm, at least 1 hour or overnight. Bake, pressing down dough if puffing, until pale gold, about 25 minutes. Let cool completely.
  • Make the filling: Heat milk and 1/2 cup cream in a medium saucepan over medium-high heat until almost boiling. Whisk together yolks, sugar, cornstarch, flour, and a pinch of salt. Slowly pour some of the warm milk mixture into yolk mixture, and whisk to combine. Pour yolk mixture into saucepan with remaining milk mixture. Bring to a boil, whisking constantly, and cook for 1 minute, continuing to whisk.
  • Strain mixture through a fine sieve, and whisk in vanilla. Place plastic wrap directly on surface of pastry cream, and refrigerate at least 1 hour or overnight. When ready to use, whip remaining 1/2 cup heavy cream until soft peaks form. Fold into pastry cream.
  • Assemble the tarts: Fill each tart shell halfway with pastry cream. Top with berries; gently brush with jam.

8 ounces phyllo dough, thawed
6 tablespoons butter, melted
8 ounces mascarpone cheese
8 ounces cream cheese
1/4 cup Splenda brown sugar blend
1/4 cup sugar-free strawberry jelly
1/2 cup powdered sugar
3 teaspoons lemon juice (I used fresh squeezed)
1 cup frozen raspberries (thawed)
1 cup frozen blueberries (thawed)
1 (14 ounce) can whipped topping (optional for garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Lay unrolled stack of phyllo sheets on flat surface, cover with large piece of saran wrap or parchment paper & then cover with damp kitchen towel.
  • Remove one phyllo sheet to a flat surface & brush with melted butter. Remove second sheet, lay over the first sheet & brush with butter. Repeat til you have 5 sheets total. (Re-cover the rest of the sheets each time to keep from drying out, but make sure to not get them wet with the damp towel).
  • Using knife or pizza cutter, cut stack of buttered sheets into 6 squares. Lay one stack of squares into a muffin cup, gently pushing down in the middle & around the sides. Repeat with remainder of squares.
  • Repeat steps 3 & 4 until all of the phyllo sheets have been used.
  • Bake at 350 degrees for 8 minutes. Remove from oven & allow to cool in pans.
  • In mixer fitted with wire whip attachment, combine mascarpone cheese, cream cheese, Splenda, strawberry jelly, powdered sugar & lemon juice til smooth.
  • Fold in raspberries & blueberries.
  • When phyllo shells are cool, spoon in the filling (I used a small cookie scoop) & top with a dollop of whipped cream if desired.
  • Store in refrigerator.

1/3 cup well-chilled heavy cream
1/4 cup sugar
1 1/2 cups small strawberries
1 cup raspberries
1 cup blueberries
1 cup blackberries
2 tablespoons sweet orange marmalade
2 tablespoons dark berry liqueur such as blueberry, blackberry, or cassis

Steps:

  • Preheat oven to 375°F.
  • On a floured surface with a floured rolling pin roll out dough into an 11-inch round (about 1/8 inch thick) and fit into a 9-inch tart pan with a removable fluted rim. Roll rolling pin over top of shell to trim dough flush with rim and with a fork prick bottom of shell all over. Chill shell 30 minutes, or until firm.
  • Line shell with foil and fill with pie weights or raw rice. Bake shell in middle of oven 20 minutes and carefully remove foil and weights or rice. Bring tart to room temperature and remove side of pan before serving.
