1 teaspoon baking powder

3/4 cup milk
1/2 cup molasses ( or honey or equivalent non-sugar sweetener )
2 tablespoons oil
1 egg (beaten)
1/4 cup walnuts (chopped)

Steps:

  • Preheat oven to 400ºF.
  • Stir together the bran, flour, soda and baking powder. Stir in raisins and set aside.

1 cup buttermilk
⅓ cup vegetable oil
1 egg
⅔ cup brown sugar
½ teaspoon vanilla extract

Steps:

2 1/4 cups all-bran cereal
1/2 cup raisins
1 cup all-purpose flour
3/4 cup whole wheat flour
1/2 cup packed light brown sugar
2 teaspoons baking soda
1/2 teaspoon salt
6 tablespoons margarine, melted
2 large eggs
1 3/4 cups plain yogurt
1/4 cup unsulphured molasses
2 teaspoons vanilla extract
optional sugar crystals

Steps:

  • Preheat the oven to 400 degrees F. In a food processor, finely grind half of the cereal. Add the raisins to the mixture, but do not grind them. Transfer the mixture to a bowl with remaining cereal, flour, whole-wheat flour, sugar, baking soda, and salt. Set aside.
  • Combine butter, eggs, yogurt, molasses, and vanilla. Stir together wet and dry ingredients until just combined. Do not over mix.
  • Line muffin tin with baking cups. Fill each just more than halfway. Sprinkle generously with sugar crystals, if desired (they add a good taste). 1 cup oat bran
1/2 cup wheat germ
1/2 cup flax seed meal
1 cup whole wheat flour
1 tablespoon vital gluten
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup brown sugar
1/4 cup hemp seeds (aka hemp hearts)
2 tablespoons chia seeds
2 tablespoons buckwheat groats
1/2 cup pecans, chopped
1/2 cup dried cranberries

1 cup milk
2 eggs, beaten
