- Spray small glass custard cup with olive oil spray (mine is slightly larger at the top.
- Break one egg into cup and beat with fork until yolk and white are mixed.
- Add water and mix.
- Chop vegetables (meat) into very small pieces and mix with egg in custard cup.
- Add shredded cheese-mix lightly.
- Season to taste.
- Put custard cup on a microwave safe plate and place in microwave oven on high for 1 1/2 minutes or until cooked through.
- Carefully remove and invert custard cup onto plate. Add garnish as desired.

- Spray the inside of a large, microwave-safe mug lightly with cooking oil spray: or coat the inside of the mug with olive oil.
- Crack 2 eggs into the mug, add 1 tablespoon of milk, and beat with a fork.
- Add grated cheese and other extras: such as chopped red bell pepper or chives. Add a sprinkle of salt and pepper. Stir with a fork until well mixed.
- Microwave and stir in 20 to 30 second increments: Microwave for 30 second on high. Remove from microwave and stir with a fork. Return to the microwave and cook for another 20 to 30 seconds. (Whether it's 20 or 30 depends on the power of your microwave, you may need to experiment to see what times work best for your situtation.) You'll see patches of firm cooked egg mixture beginning to form. Remove and stir again. Return to the microwave and cook for another 20 to 30 seconds or until the omelette has set.

- In a measuring cup, whisk together eggs, water, salt, and pepper.
- Spray cooking spray to coat a microwave-safe plate. (I recommend using a plate with a bit of a lip around the edge!)
- Pour egg mixture onto prepared plate. Add a sprinkle of cheese if desired, or omit to keep your microwave omelette dairy free.
- Cover plate with plastic wrap, sealing around the edges. Cook omelette in microwave on high power for 2 minutes. (It WILL floof up in the microwave, but that's okay-just let it be!)
- Carefully remove plate from microwave, remove plastic wrap, and allow to cool for about 2-3 minutes.
- Add additional fillings of choice before folding over and adding desired toppings.
- Serve and enjoy with sliced avocado, cooked bacon, or any accompaniments you like!
