PECAN SANDIES

Pecan Sandies image

Dense and buttery, this cookie is closely related to shortbread, which originated as a holiday treat in ancient Scotland. These pecan sandies are simply delicious.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 5 dozen

Number Of Ingredients 7

1 cup (2 sticks) unsalted butter
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
2/3 cup pecans, finely ground
1 2/3 cups all-purpose flour
Pinch of salt
1/4 cup confectioners' sugar

Steps:

  • Heat oven to 350 degrees. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and granulated sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in vanilla.
  • Mix ground pecans with flour and salt, and add to butter mixture. Beat, beginning on low speed and increasing to medium, until combined, about 1 minute.
  • Lightly flour palms, if necessary, and roll dough into 3/4-inch balls. Place on an ungreased baking sheet 1 inch apart. Bake until just brown on edges, 20 to 25 minutes. Remove cookies from baking sheet while still warm; sift confectioners' sugar over tops.

Tips:

  • Use cold butter: This will help the cookies hold their shape better in the oven.
  • Cream the butter and sugar together until light and fluffy: This will help create a smooth, even dough.
  • Add the eggs one at a time, beating well after each addition: This will help prevent the cookies from curdling.
  • Stir in the dry ingredients gradually: This will help prevent the cookies from becoming tough.
  • Chill the dough for at least 30 minutes before baking: This will help the cookies hold their shape even better in the oven.
  • Bake the cookies until the edges are just beginning to brown: This will help prevent the cookies from overbaking and becoming dry.
  • Let the cookies cool completely on the baking sheet before transferring to a wire rack: This will help prevent the cookies from breaking.

Conclusion:

Pecan sandies are a delicious and easy-to-make cookie that is perfect for any occasion. With just a few simple ingredients, you can create a batch of these classic cookies that are sure to be a hit. So next time you're looking for a sweet treat, give pecan sandies a try. You won't be disappointed!
