1 pkg. (8-serving size) JELL-O Island Pineapple Gelatin
1 can (12 oz.) evaporated milk
1 can (8 oz.) crushed pineapple, undrained
1 cup BAKER'S ANGEL FLAKE Coconut
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add evaporated milk, pineapple and coconut; mix well.
  • Pour evenly into 8 small dessert dishes.
  • Refrigerate 3 hours or until firm. Top with the whipped topping just before serving. Store leftover desserts in refrigerator.

1 1/4 cups graham cracker crumbs (about 16 squares)
1/4 cup butter (melted), or canola or soybean oil
1 tablespoon sugar
1 quart (4 cups) vanilla no-sugar-added, reduced-fat ice cream, slightly softened
1 can (8 oz) crushed pineapple in juice, undrained
2 teaspoons rum extract or 1/4 cup rum
2 teaspoons coconut extract, if desired
1/4 cup flaked coconut, toasted*

Steps:

  • Heat oven to 350°F. In small bowl, mix cracker crumbs, butter and sugar. Press into ungreased 8-inch square (2-quart) glass baking dish. Bake about 10 minutes or until dry. Cool completely, about 1 hour.
  • In large bowl, beat ice cream, pineapple with juice and extracts with electric mixer on low speed just until blended. Spread in baked crust. Freeze about 6 hours or until firm.
  • Remove dessert from freezer about 5 minutes before serving. Sprinkle coconut over top.

3/4 cup coconut
1/2 cup sliced almonds
1 (8 ounce) package cream cheese, softened
1 cup whipping cream
2/3 cup milk
1 package instant coconut cream pudding mix (small)
1 (8 ounce) can crushed pineapple in juice (, don't drain)
2 tablespoons rum or 1 teaspoon rum extract

  • Preheat oven to 350 F degrees.
  • Spoon flour into measuring cup and level.
  • In bowl, mix flour and brown sugar.
