Quick, Simple, and filled with real Cajun flavor as if you're eating in New Orleans, Louisiana. While simmering, taste for flavor - add a little more Cajun seasoning if needed. I've combined green, orange, and red bell peppers before and it was delicious. Note: 2 tablespoons minced garlic, not 2 cloves

EASY RED BEANS AND RICE

I got this recipe a few years ago from my secretary and my family just loves it. They make it for their own families now.lt is also a good dish to take to a potluck dinner. You never bring any home and it's a good idea to copy the recipe for hand outs because you will be asked. It's easy, but tastes like you spent all day on...

Time 45m

Number Of Ingredients 7

1 lb jimmy dean sausage {maple flavored)
3 can(s) red beans
3 pkg brown gravy mix
3 Tbsp creole seasoning
1 tsp ground, black pepper (optional)
3 c water
2 pkg success rice, cooked and drained

Steps:

  • 1. Cook rice, drain and put aside
  • 2. In a large skillet or dutch oven, brown sausage...Drain if you need to.
  • 3. Add in the three cans of red beans. You do not need to drain them
  • 4. Mix the three packages of gravy mix with the three cups of water. Stir well and pour into the bean mixture.
  • 5. Stir until mixture thickens....Add creole seasoning and pepper (if needed). Stir in rice. Serve with hot bread and a salad....Wonderful comfort food...

Tips:

  • Use dried red beans for a more flavorful dish. If using canned beans, rinse them thoroughly before cooking.
  • Soak the beans overnight in water to reduce cooking time. If you don't have time to soak the beans, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a heavy-bottomed pot or Dutch oven to cook the beans. This will help to prevent them from sticking to the bottom of the pot and burning.
  • Add aromatics, such as onion, garlic, and celery, to the pot when cooking the beans. This will help to add flavor to the dish.
  • Season the beans with salt, pepper, and other spices to taste. You can also add a bay leaf or two for extra flavor.
  • Simmer the beans for at least 1 hour, or until they are tender. The longer you simmer them, the more flavorful they will be.
  • Serve the beans over rice with your favorite toppings, such as hot sauce, sour cream, or shredded cheese.
